A BEGINNER'S GUIDE TO CHARCOAL GRILLING Please use caution and wear gloves when handling hot charcoal, and do not grill indoors. Editor’s Introduction: In honour of grilling season, I’ve invited Chef Michael P. Clive of the Weber Grill Academy to share his best tips for charcoal grilling. I met Chef Clive back in 2015 when I attended a cooking lesson at the Weber Grill Academy, and asked him to share his best tips. SPICED HOT COCOA RECIPE Add 2 tbsp of cold milk, and whisk until the cocoa powder is dissolved. Add the remaining milk to the pot. Turn the heat on to medium, and whisk to combine the ingredients. Add the remaining ingredients, and simmer gently over medium heat, stirring often, forabout 10 minutes.
CARIBBEAN MACARONI PIE RECIPE Instructions. Preheat oven to 350°F. Boil macaroni in salted water approximately 8 minutes, or according to package instructions. Once cooked, drain and set aside. In a large bowl, beat eggs until fluffy. Add milk, pepper, sugar and salt and stir until combined. SINGAPOREAN STYLE SLAW (LO HEI) Place a small saucepan over medium-high heat, add vinegar and water and bring to a boil. Meanwhile, peel and thinly slice red onion. When water is boiling, add salt, peppercorns, fennel seeds, bay leaf, and thyme, then continue boiling for another 5 minutes. PERSIAN RICE WITH POTATO TAHDIG Drain and rinse with cool water to stop the cooking process. Drain rice completely and set aside. Drain your potatoes and rinse any residual starch off. Shake off excess water, then pat dry with a towel or paper towel and set aside. Heat the oil and 1 tbsp of butter in a non-stick pan over medium heat. GRILLED JERK SHRIMP WITH COCONUT RICE Season with salt and pepper, to taste. Serve immediately with coconut rice, or side dish of your choice. To Make the Coconut Rice: In a pot, melt the coconut oil over medium-high heat. Add the rice to the pot, and stir to coat grains with oil. Toast for about 3 minutes. Add thyme, salt, sugar, coconut cream and water. TRINIDAD MACARONI PIE RECIPE Stir to combine. In a large bowl, beat eggs until fluffy. Add milk, salt, pepper, garlic powder, dry mustard, dried thyme and cayenne pepper. Stir to combine. Pour the egg mixture over the macaroni and stir until well coated. Stir in 3 cups of the shredded cheese. Pour into a greased, 9×11 baking dish and top with reserved ½ cup ofshredded

APPLE CRISP RECIPE WITH OATS AND PECANS In a large bowl, combine chopped apples with lemon juice and stir to coat. Sprinkle the sugar, cinnamon and nutmeg over the apples. Add the bitters, if using. Stir to combine and set aside. Make the Oat Pecan Topping: In a bowl, combine the oats, flour, pecans, brown sugar, orange zest and salt. Stir to combine. THAI RED CURRY WITH CHICKEN Instructions. Heat oil in a large non-stick skillet oven medium-low heat. Add the onions and cook until softened, about 5 minutes. Add the bell pepper and cook for 2-3 minutes. Add the garlic and cook for 1 minute, stirring frequently to prevent burning. EGGLESS EGGNOG RECIPE Instructions. Add all of the ingredients to a blender. Blend on high* and chill in the refrigerator until ready to serve. When ready to serve, add alcohol (if using) and blend again to create a nice froth. Pour a 1/2 cup serving into each glass, then spoon some froth on top. Top each glass with a sprinkle of nutmeg. SAFFRON 101 (EVERYTHING YOU NEED TO KNOW It is also commonly used in Italian risotta alla Milanese, French bouillabaisse, Persian polow rice dishes and Yellow Chartreuse (a French liquer). You can add saffron threads to dishes whole, or grind them into a powder. Soak the threads in warm water or another liquid to soften, then add it with the liquid to whatever you’re cooking. SMOKED SALMON CANAPÉS Instructions. Fill a large saucepan with water, add 1 tsp of salt, and place over medium-high heat. Bring to a boil. Meanwhile, in a bowl, combine the cream cheese, capers, lemon juice and dill. Set aside for later. Add ice to a large bowl of cold water, and place it next toyour stove.
SPICY MARINATED WATERMELON BITES Cut the rind off of the watermelon and discard. Carefully cut the watermelon flesh into small triangles, about 1/2 inch in thickness. Place the watermelon pieces into a large, non-metallic bowl. Pour the marinade over the watermelon and stir gently to combine. Let SPINACH SALAD WITH PEARS, PECANS AND GOAT CHEESE For the Salad: 8 cups baby spinach , washed and dried. 1/2 cup pecans , toasted and chopped. 2 large ripe pears , peeled and sliced into wedges. 1/3 cup plain goat cheese , crumbled. Instructions. For the Dressing: Place all ingredients in a bowl and whisk until combined. Alternatively, you can add the ingredients to a mason jar, screw thelid

2 pieces orange peel , fresh (2-3 inches) white sugar , to taste. Instructions. Combine all ingredients, except the sugar, in a large pot. Gently simmer for about 10 minutes, then remove from heat. ROASTED OKRA RECIPE
Remove the top and bottom stems from the okra, then cut them into half-inch pieces. Add the okra pieces to a large bowl, and drizzle with the oil. Add salt and garlic powder, then stir. Arrange the okra in a single layer on 2 parchment lined baking trays, and bake for 10 minutes, stirring occasionally. Check for doneness.SORREL DRINK

Allow the mixture to sit for at least 30 minutes, up to 2 hours PAN-FRIED DUMPLINGS (POTSTICKERS) Place a non-stick skillet with a lid over medium-high heat. Add 2 tsp peanut oil to pan, and allow to heat up. Place about 8-10 dumplings (depending on the size of your skillet) flat side down, and pan-fry for 2-3 minutes, or until golden brown. Add 1/4 cup MANDARIN ORANGE JELLY RECIPE Instructions. Set a small saucepan over low heat. Place the gelatin leaves in a bowl and cover with 500ml cold water, soak for a few minutes until softened. Pour the Mandarin orange juice into the pan to warm up, this will only take a few minutes. Then add the softened gelatine and let it dissolve, stirring occasionally. Growing your own food doesn’t have to be complicated. Keep reading to get my tips for growing edible plants in containers, starting fromseeds.
Every spring my mom and I pick a few vegetables to grow. It’s a tradition she started when I was a kid and we were living on the 6th floor of an apartment building. Obviously, we could only do container gardening back then, but even now we find that there are certain plants we’d rather not grow in the garden. As you can see from the photo above, our eggplants and tomatoes (and a bunch of other stuff not shown) live in their own containers, while the flowers occupy the garden beds. We don’t usually grow a ton of stuff, just enough to keep ourselves occupied during the warmer months. A few carrots here, maybe a small patch of berries there. We’ve had excellent luck growing tomatoes and mint. We’ve also had the WORST time trying to grow broccoli (went to flower before gaining any size), Brussels sprouts (huge, hideous, with nothing edible on it) and dill (ravaged by caterpillars!!). One year in the apartment, we even had a pretty nice avocado plant! Although I don’t think it ever had fruit on it… This year we decided to try growing more types of herbs and veggies, but we also wanted to try to keep our costs down. Gardening can get expensive when you buy baby plants, or established plants, from a greenhouse. So we opted to spout our own seeds – something that we’ve had minimal success with in the past.
