Each holiday season I looked forward to the dish because it was something not frequently served the remainder of the year. The original recipe was posted nearly two years ago and remains LOW CARB BEEF ZUCCHINI ENCHILADAS 2. In a large skillet over medium heat, melt butter. Add onion and saute until translucent. Add ground beef and salt to taste and cook on medium heat until no longer pink (about 5-10 minutes). 3. While the beef is browning prepare zucchini slices. 4-5 tbsp fruit puree (ie. peach puree) 2 tbsp infant formula/breastmilk (or milk) 1/3 cup old fashion oats. Instructions. 1. Mix together ingredients and stir well. 2. Refrigerate overnight (or at least 4-6 hours) Powered by Recipage. LOW CARB BEEF ZUCCHINI ENCHILADAS 2. In a large skillet over medium heat, melt butter. Add onion and saute until translucent. Add ground beef and salt to taste and cook on medium heat until no longer pink (about 5-10 minutes). 3. While the beef is browning prepare zucchini slices. Use a “Y vegetable peeler” to slice the zucchini into thin slices. STUFFED SALMON WITH CRANBERRIES AND BRIE Heat a medium skillet to medium heat. Add buttery spread. Once melted add onion and stir. Once the onion becomes translucent add garlic and cook for 2-3 minutes or until slightly browned. Add spinach and dried cranberries and cook for another 1 minute. 4. Place each salmon filet on a small piece of foil. TOMATO HERB TILAPIA FOIL POUCH In a medium bowl mix together tomatoes, cilantro, onions, olive oil, and salt. Set aside. 3. Lightly salt and pepper both sides of the tilapia filets. 4. For each packet, use about 2 large (about 20 inches long) sheets of foil and lay flat out and spray with non-stick spray.5.
