THE URBAN POSER
Maple Carrot Cake. For this recipe, you will need three 6-inch (15-cm) round cake pans, as the recipe is written for that amount of batter. However, this amount of batter will also make one 9-inch (24-cm) round cake for a nice single-layer cake if desired. Ingredients For the cake: ¼ cup sustainably harvested palm shortening (or sub ghee) GLAZED GRAIN-FREE FRENCH CRULLERS 1 cup plus 1 tablespoon (130 g) Arrowroot flour* (Get it HERE) 2 tablespoons Coconut flour (Get it HERE) 2 tablespoons maple sugar (optional) and a pinch of salt. 5 Tablespoons (65 g) non-hydrogenated, sustainable palm shortening (Get it HERE )**. ½ cup (120 ml) full-fat coconut milk***. ¼ cup (60 ml) water. 2-5 large eggs, roomtemperature

There may not be another food that can conjure quite as much nostalgia for me as cinnamon rolls. My mother used to make the most brilliant cinnamon rolls from scratchMAPLE CARROT CAKE

Loosen the edge of each cake with a sharp knife, then turn the cakes out onto a wire rack and let cool completely before assembling. Once the cakes are have cooled, prepare the buttercream. Combine the egg whites, maple syrup, and cream of tartar in a large heatproof bowl. PALEO HOMEMADE MARSHMALLOWS 2. In your mixer bowl, sprinkle the gelatin evenly over 1/2 cup of water. Allow to bloom (hydrate) for about 5 minutes. 3. While the gelatin is blooming, pour the other 1/2 cup of water in a sauce pan, along with the honey/maple syrup and the salt. Turn the burner on at a medium to medium high heat. 3 STEP HONEY CARAMEL 1. In a medium heavy bottomed sauce pan, combine all ingredients and bring to a gentle simmer over medium heat. Turn the heat down to a medium low and continue to lightly simmer undisturbed until reduced by about half, and it reaches a nice golden amber color.THE URBAN POSER

YES, almond flour is high in Omega-6’s and can cause inflammation when eaten in excess or when consumption is out of proportion to the appropriate omega 6/omega 3 ratio. And then of course there is the issue of some believing almonds are not PALEO SNICKERDOODLE COOKIES Ingredients: 2 cups (200g) blanched, fine almond flour 1/4 teaspoon salt rounded 1/4 teaspoon baking soda 1/3 cup melted palm shortening, ghee or coconut oil, melted GLAZED GRAIN-FREE CHOUX PASTRY DONUTS 2 tablespoons maple sugar (optional) and a pinch of salt. 5 Tablespoons (65 g) nonhydrogenated, sustainable palm shortening (Get it HERE )**. ½ cup (120 ml) full-fat coconut milk***. ¼ cup (60 ml) water. 2-5 large eggs, room temperature (# of eggs added will vary) Egg subs won’t work. *You can sub tapioca flour.
