HOW TO MAKE A STARTER A simple way to start is to put a 1/2 cup of organic stonegound wholemeal flour and just over a 1/2 cup of warm ( 28 C ) water in a large jar. If it feels too thick, add a little more water. It should be like a thick milkshake. Try and stick with one variety flour. A dough made with a mixture of white and wholemeal flours, studded with flax seeds and rolled oats. 48 hour rustic sourdough. Made with a mixture of bread flour and kamut flour, and a long prove. 50% einkorn WHOLEMEAL SOURDOUGH RECIPE Makes 1 x 800-g/1¾-lbs. Loaf. In a small mixing bowl, mix the flour and salt together thoroughly. Set aside. This is the dry mixture. Add the sourdough starter to a large mixing bowl. The video below tells you more about what this means. I also highly recommend the Lammas Fayre heritage flours produced by archaeobotanist and heritage grain pioneer John Letts who also tutors at the School. These flours are milled from ancient cereal varieties, grown using traditional methods. HOW DOES SOURDOUGH PARTICULARLY HELP SUPPORT THE GUT Sourdough can help increase your dietary fibre intake by 10-15% and the ratio of soluble to insoluble fibre can be manipulated depending on how long you ferment your dough. Recent advances in the area of gut health has shown that phenolic compounds { LINK } in addition to fibre has been shown to improve gut microbial diversity which is pivotal CAN BAKING & EATING SOURDOUGH HELP LOWER STRESS? We are told that meditation and mindfulness are effective ways to reduce stress, yet so many of us resist enforced mindfulness practice. Sourdough, when made well, is about being in the moment. Good bakers connect to the dough. Creating bread is a gentle, yet powerful, form of mindfulness. We evolved with fermentation. SOURDOUGH BREAD, BLOOD SUGAR RESPONSE, AND DIABETES. The white sourdough bread showed the least pronounced response, with both blood glucose and insulin increases significantly lower than those seen following a breakfast of non-sourdough bread. This is important because, from a health perspective, the aim is to keep blood sugar and insulin levels as close to normal as possible. HOW TO TRAVEL WITH A SOURDOUGH STARTER But the instructions are here in case you forget. HOW TO REFRESH WHEN TRAVELING. Essentially, to refresh your starter you take ¾ (60g) of the starter out of the 80g we give you. Then stir 25g of water and 35g of flour into the remaining ¼.
