Last month as I was planning on a simple birthday dinner for my son and one of my grandsons I was told that my twin 5 year old grandkids were expecting a major birthday party. They were insisting on games, a pinata, and all the accoutrements of a “real” birthday party. SUNFLOWER GRANNY SQUARE BLANKET The sunflower part of the pattern uses puff and bobble stitches worked in rounds. Once the flower is complete it’s framed in a square making it a granny square. The squares in the pattern were stitched together to make a really cute bag. But I though how cute it would to join squares to make a small lap blanket or throw.INSIDE SANTORINI
When we think of Santorini pictures of white washed houses with blue domes and pristine blue waters come to mind. I’m pretty sure everyone has seen pictures of the iconic churches located in the main town of Fira and the quaint village of Oia on the island of Santorini.DIY PIRATE PARTY
We hosted my grandson’s 6 th.Birthday at our neighborhood park. The wide open grassy area was a great venue for the swashbuckling party games and activities. The park had picnic tables in a shady area and was a great place for all the Pirate Grub. Clean up was a snap, no need to worry about spills and crumbs, no one had to swab the decks! When the pirates went home we loaded up all our HOT DIGGITY DOG A DIY HOT DOG BAR! FREE PRINTABLE A nice touch to a hot dog bar are these “suggestion” cards. Printed on them are ideas for creating a gourmet hot dog. For this party we kept to the theme and made train names for the hot dogs using the characters from Thomas and Friends. One Charming Party. This is another cute idea from One Charming Party, “how to” cards. HOW TO UPCYCLE CHEAP GLASS VASES Heat oven to 350 degrees. Once it reaches temperature turn on your timer for 30 minutes. Let vase cure in oven for 30 minutes without opening the oven door. After 30 minutes turn oven off and let vase cool INSIDE the oven. Don’t open the oven door while it cools! FARM THEMED GRAD PARTY It cost just over $10 to light up the yard! Here’s what you do: Cut a small slit on the bottom of the cups. Insert a bulb in the slit, the bulb housing keeps the cup in place. Place a cup on every 5th. bulb along the strand. Hand it between trees, along a fence, and any whereyou need lights.

May 12, 2021Creating your very own beehive is going to be so much fun. While you may not get this up close and personal with a real beehive, you can with this one. Go ahead and make this Beehive Paper Craft. The end result will be bee-utiful. If you enjoy adding lots of color to your crafts, then this one is for you. Coloring, cutting, and assembling this Beehive Paper Craft is exciting, so have fun with it. How to Make a Beehive Paper Craft for Kids What you need: Beehive templates Crayons Scissors Glue Step by Step Tutorial Start this fun project by printing out the templates. Try to color everything before you cut it out because it is easier that way. Once you have colored everything, go ahead and take your time cutting out all of the pieces. Once everything is cut out. You are going to start putting everything together. Start by folding down the flaps on the yellow squares. You are then going to start gluing the bees into what they will look like to make the beehive come together. Once you glue the bees, you can move onto the next part. You are actually going to glue the wings onto the bees! Look at how adorable these wings are! Start assembling the beehive onto the paper. Start adding the accessories to the beehive. Now you’re going to start gluing down the yellow squares that you folded earlier. Keep going until you have added all the pieces. It should look like the picture below. Tutorial – Beer Gift Idea for Men! June 4, 2021Not sure what to get your man for Valentine’s Day or an anniversary? How about a beer bouquet? It’s simple to make, and he’s sure to love it. Whine alert – men have it SO much easier than women when it comes to gift-buying! Amiright? Especially when it comes to an occasion for a smaller gift, like Valentine’s Day or anniversaries. All the guys have to do is stop by the florist (or Trader Joe’s!) for a bouquet of flowers and a card…but there is no “standard” romantic gift for men! (Unless I’ve been missing something all these years??) Our 8th wedding anniversary was this summer, and we don’t typically do big anniversary gifts for each other. I wanted to get my husband more than a card, but didn’t have any good small gift ideas either. So I decided to get him a 6 pack of craft beer…but dress it up a little bit 😉 A beer bouquet! It was pretty simple to put together – I used my Silhouette to cut out paper roses and leaves from red and green card stock. If you don’t have a cutting machine, though, you can find plenty of rolled paper flower templates on Pinterest to print and cut out by hand. I rolled the paper rose around the top of the beer bottle, using a few pieces of double-sided tape to attach it. Then I added some leaves to the side of the bottles and a green circle to the lid. Of course, I couldn’t put this beautiful beer bouquet back into a plain old 6 pack holder…so I used some wrapping paper to cover it up and make it look a little bit nicer 😉 Ta-da! A bouquet for men! My husband was surprised and impressed. And another positive, when he put the beer in the fridge he didn’t have to worry about guests grabbing his special “rose” beers by mistake. DIY: Rainbow Felt Table Runner May 31, 2021I prefer celebrating St Patrick’s day with bright rainbows (and…pots of gold!) over the usual green theme. Especially when it’s been a dreary, wet, muggy week like the one we’ve had here in San Francisco. Today I’ll show you how to make this pretty rainbow table runner that you can use for a St Patrick’s Day party, birthday party, or just to brighten your afternoon tea parties. Supplies for table runner: Craft felt in a rainbow of colors, scissors, chalk marker (or pen), ruler, cotton strip of fabric, heat and bond iron on adhesive sheets, sewing machine and white thread. Supplies for pots of gold: Mini mason jars, masking tape black or chalkboard spray paint, gold coins. Keep reading to see the full tutorial… Step One: With your ruler and chalk marker, make marks on a piece of felt every 2 inches. Step Two: Draw diagonal lines up so you’re making 5 triangles per felt sheet Step Three: Carefully cut out your triangles. Repeat steps 1-3 on all the colors you’re using for the runner. Step Four: Line up a rainbow strip of colors, markings side up on your ironing board. Match them up right against each other as neatly as possible (it might not be perfect). Step Five: Cut a strip of heat and bond paper the size of your rainbow strip and place on top. Bumpy side down, touching the felt triangles. With a hot iron, iron the sheet to the felt which will adhere it. Step Six: Trim the edges of the heat and bond sheet off. Step Seven: Cut a piece of cotton fabric the width of your triangles and finish the edges on the sewing machine Step Eight: Peel off the paper backing from the heat and bond sheet and place sticky side up on the ironing board. Step Nine: Lay your white fabric carefully on top of the felt triangles (sticky side is up) and iron it on. Work in sections and use steam if necessary. Continue ironing until the entire section is adhered. Step Ten: Repeat on the rest of your rainbow sets until the length you desire is complete. Make sure when you’re adding sections together that you’re careful to line them up right against each other. For the pots of gold I spray painted mini mason jars with chalkboard paint and filled with fake coins. Rainbow Scarf Tutorial May 28, 2021It’s super cold here today, the coldest day of the year so far by a long shot. It has been snowing in all kinds of places across the country (places where it doesn’t usually snow!), fortunately we are all cosy inside with the fire going. You will remember the rainbow fingerless mitts I made a little while ago for Maia? Well after much pestering here is a crochet rainbow scarf to match. I really love this colour combination, so bright on these cold winter days, and perfect for wrapping around a little neck to keep out the chill! Very easy crochet rainbow scarf pattern. Using DK (8ply) yarn of your choice and a 4mm crochet hook. Leave a long end (approx 15cm) and chain 150 in pink. Turn. Half double crochet back along your foundation chain. Fasten off, change to red and leave a long tail end on both the last colour (pink) and the new colour (red), these long ends will become your tassels.Turn. Chain 2 and half double crochet along length. Fasten off, change to yellow and leave a long tail end on both the last colour (red) and the new colour (yellow).Turn. Chain 2 and half double crochet along length. Fasten off, change to green and leave a long tail end on both the last colour (yellow) and the new colour (green).Turn. May Day Made Better
May 26, 2021May Day reminds me of how I’ve never been good the anonymous acts of kindness. I do love to help. With three younger siblings there was always a child in need of shoe tied or a nose wiped. When I was old enough to babysit for other families, I delighted in sweeping the floors and doing the dishes to please the returning parents. By junior high, volunteering was vital in my life. First as a lawyer, now as an executive coach, helping is my jam. An enneagram assessment affirms my identity as a Number Two—The Considerate Helper. Being kind is easy. Being anonymous not so much for me. Unlike countless friends and family I could name (naming them would rob them of their incognito intention), I feel compelled to tell someone else about good things I’ve done. It’s quite unattractive. I know people who’ve sacrificed vast quantities of time, money, and blood with most people in their life never knowing. For years they give and give without the need to mention it to a soul. The joy in their giving is enough. When my children were growing up, we celebrated secret giving by making May Day deliveries. We fashioned little handled baskets with colored construction paper, filled them with candy and nuts, and hung them on the doors of neighbors. Ringing the bell and running away before anyone saw gave great delight to the giver. For someone who is well loved by many, it both surprises and disappoints me to see how I seek assurance from the outside that I am a good person inside. Yet I make a boastful beg for the approval of others under the guise of simply sharing. In contrast to the joy in the giving, a sad dose of shame is delivered the instant I speak of the deed. While there are many out there inspiring good acts, I know myself too well to claim that’s my goal. In this era of compulsory COVID adaptability, I now add staying silent more often to the list of useful skills to develop when the old ways of doing things no longer work. Ribbon Weaving Art With Kids May 21, 2021Before the school year ended, we decided to use some ribbons on canvas to make this fun weaving art project. We used ribbons leftover from our egg baskets, so the weaving has a spring-like feel to it. Materials: Ribbon White canvas Glue gun Directions: Use the glue gun to secure the base ribbons to the canvas. Be sure just to glue the ribbons at both ends, and to the back of the canvas (I glued them along the 8-inch sides of the canvas, with some help from the kids). Be sure there is a little give with the ribbons so the kiddos can weave. Obviously, don’t let the ribbons be too loose either. Leave about a half-inch space between each of the base ribbons. Next it’s time to add the ribbons that will be used to weave. Glue them to the opposite side of the base ribbons (I glued them along the 12-inch side of the canvas, again with some help). There’s no need to keep space between these ribbons, so just glue them side-by-side. Let the kids begin weaving once the glue is dry. If needed, remind them that it’s like a pattern – over, under, over, under, etc. Keep encouraging them as they weave all of the ribbons along the canvas. Once all of the ribbons are woven, glue the edges down. Be sure the ribbons are pulled securely, but not overly tight. Then it’s just a matter of deciding where to hang the colorful weaving art! And since it uses contact paper, even small toddlers can make one to give to their loved ones. What You’ll Need: • cardstock • contact paper (You can buy a small roll of vinyl book cover at the dollar store, which works exactly like contact paper. That’s what we always use for contact paper crafts.) • coloured transparencies, tissue paper or coloured cellophane • scissors • pencil How To Make It: To prep the craft you will first need to trace your child’s hands onto a piece of cardstock. Cherry Blossom Painting CottonBalls
May 14, 2021Nothing says spring like seeing blooming cherry blossom trees in gorgeous shades of pink! This cherry blossom painting is a wonderful spring art project for kids. Using cotton balls to paint with is so fun for kids of all ages. Both my 4-year-old and 7-year-old loved using cotton balls to paint, and so did I! The cotton balls give the painting a fluffy texture, perfect for the cotton candy texture of cherry blossom trees. We also made a gorgeous blossom spring tree craft that uses easy paper quilling techniques that you can take a look at. It was something I saw in our local art store and thought I would give it a try. It’s basically canvas that would normally be stretched onto a wooden frame but it comes in a pad with 10 sheets. I loved it! It held the paint really well and I think gives the painting a nice texture. My kids really liked using it as well, it’s always fun to find different surfaces to create on. 1. Because this cherry blossom painting is more of a branch than a whole tree, you want to cut your paper in half for a horizontal painting, which I think looks pretty cool! 2. Mix up your paints. If you have a nice sky blue and two shades of pink already, great! If not, you will need to mix your colors. I ended up mixing our blue with some white and the pink with white to make another lighter shade of pink. Using two shades of pink helps to give the painting depth and interest. And gives the kids more colors to paint with their cotton balls! We used black for the tree branch. 3. Paint the entire canvas with blue for the sky. Our paint was mixed with white so you can see some white streaks here and there in the sky which I think looks nice. Using a larger flat brush for the sky works well. Let the sky dry completely, or if you are wanting to move on quickly, you can use a hairdryer to help speed things up. 4. Draw in a branch with a pencil. Depending on the age of the child, they may need some help to do this. My daughter wanted me to draw her the branch and then she painted it in. Paint the branch with black paint and let it dry. 5. Now the fun part! Using two shades of pink, one light and one dark, have the kids paint in the cherry blossom flowers with their cotton ball paintbrushes. Start with the darker shade first, then add the lighter pink. There is no need to let each color dry in between, kids can paint with both colors at the same time. Painting with cotton balls was so fun for both of my kids I know that we will be using them again for another project. I just love how fluffy and vibrant the pink cherry blossoms look against the blue sky and black branch. Tutorial – Beer Gift Idea for Men! June 4, 2021Not sure what to get your man for Valentine’s Day or an anniversary? How about a beer bouquet? It’s simple to make, and he’s sure to love it. Whine alert – men have it SO much easier than women when it comes to gift-buying! Amiright? Especially when it comes to an occasion for a smaller gift, like Valentine’s Day or anniversaries. All the guys have to do is stop by the florist (or Trader Joe’s!) for a bouquet of flowers and a card…but there is no “standard” romantic gift for men! (Unless I’ve been missing something all these years??) Our 8th wedding anniversary was this summer, and we don’t typically do big anniversary gifts for each other. I wanted to get my husband more than a card, but didn’t have any good small gift ideas either. So I decided to get him a 6 pack of craft beer…but dress it up a little bit 😉 A beer bouquet! It was pretty simple to put together – I used my Silhouette to cut out paper roses and leaves from red and green card stock. If you don’t have a cutting machine, though, you can find plenty of rolled paper flower templates on Pinterest to print and cut out by hand. I rolled the paper rose around the top of the beer bottle, using a few pieces of double-sided tape to attach it. Then I added some leaves to the side of the bottles and a green circle to the lid. Of course, I couldn’t put this beautiful beer bouquet back into a plain old 6 pack holder…so I used some wrapping paper to cover it up and make it look a little bit nicer 😉 Ta-da! A bouquet for men! My husband was surprised and impressed. And another positive, when he put the beer in the fridge he didn’t have to worry about guests grabbing his special “rose” beers by mistake. SERVES: 4 PREP TIME: 15MINS COOK TIME: 1HR 20MINS INGREDIENTS: 14 DIFFICULTY: EASY INGREDIENTS: 200g amaranth (from health food shops) 15 unpeeled garlic cloves, bruised 2 baby fennel, cut into eighths 8 Asian (red) eschalots, halved 2 tbs currants 2 tbs finely chopped preserved lemon rind 1/4 cup (60ml) extra virgin olive oil 1.2kg whole chicken, butterflied (ask your butcher to do this) 2/3 cup (165ml) chicken stock 1/2 bunch each mint, parsley and basil leaves Lemon wedges, to serve ALMOND DUKKAH 1 tbs each cumin, coriander and fennel seeds, toasted 1/4 tsp dried chilli flakes 1 tbs chopped roasted almonds METHOD: 1.For the almond dukkah, using a mortar and pestle, pound seeds until coarsely ground. Stir through chilli flakes, almonds and 1/2 tsp salt flakes, and set aside. 2.Place amaranth and 2 cups (500ml) water in a saucepan over high heat and bring to the boil. Cover, reduce heat to low, and cook for 20 minutes or until amaranth has absorbed water and is tender. 3.Preheat oven to 220°C and grease a shallow roasting pan. 4.Cover base of prepared pan evenly with cooked amaranth. Combine garlic, fennel, eschalot, currants, lemon and 1 tbs oil in a bowl, then arrange over amaranth. Top with chicken, breast-side up. Spoon remaining 2 tbs oil over chicken and roast, on top shelf of oven, for 15 minutes or until chicken is slightly golden. How to: Butterfly chicken 5.Reduce oven to 200°C, carefully add stock and roast for 45-50 minutes or until juices of chicken run clear when the thickest part of a thigh is pierced with a skewer. Remove from oven, scatter with herbs and almond dukkah, and serve with lemon wedges. This cut has plenty of great flavor, thanks to some beautiful marbling, so you can forget about crazy marinades and rubs: All you need is salt, pepper, and a really hot grill. Ingredients SERVINGS 1 1½–2-inch bone-in rib eye (about 2 pounds) 2 teaspoon kosher salt, divided 1 teaspoon coarsely ground black pepper Coarse sea salt Preparation Step 1 Put steak on a wire rack set on a rimmed baking sheet. May 27, 2021We’d go to our graves defending low-maintenance, quick-cooking, always-flavorful chicken thighs as the best part of the bird. This recipe harnesses their power by using the fat that renders when they’re seared on the stove to soften thick rounds of leeks and spring peas for a built-in side. Leave the chicken uncovered when it goes into the oven so the skin crisps up while cooking. Ingredients: 4 SERVINGS 6 skin-on, bone-in chicken thighs (about 2½ lb. total) 1 Tbsp. ground coriander Kosher salt 2 Tbsp. extra-virgin olive oil 3 large leeks, white and pale green parts only, sliced ½” thick 4 garlic cloves, thinly sliced 5 2×1″ strips lemon zest 2 bay leaves ⅓ cup dry white wine 1½ cups low-sodium chicken broth 1 cup fresh (or frozen, thawed) peas 1 cup mint leaves, torn if large Preparation: Step 1 Preheat oven to 350°. Pat chicken thighs dry; sprinkle flesh side with coriander. Season generously all over with salt. Step 2 Heat oil in a large high-sided or cast-iron skillet over medium. May 25, 2021The name says it all. Shrimp with a garlicky, pungent, buttery scampi sauce. The combination of garlic and ramps may seem like overkill, but we promise it’s not. The garlic will mellow as it cooks while the ramps stay pungent. We tried it without the garlic and it just wasn’t as good. Sometimes more is more. Ingredients: 4 SERVINGS 3 Tbsp. extra-virgin olive oil, plus more for drizzling 1 bunch ramps (about 6 oz.), bulbs and greens separated, bulbs halved lengthwise, greens torn into 2″–3″ pieces 3 garlic cloves, thinly sliced ½ tsp. mild red pepper flakes (such as Maras, Urfa, or Aleppo-style), plus more for serving ½ cup dry white wine 1¼ lb. large shrimp, peeled, deveined, preferably tails left on 4 Tbsp. unsalted butter Kosher salt ½ lemon Preparation: Step 1 Combine 3 Tbsp. oil and ramp bulbs in a large skillet. Set over medium heat and cook, tossing occasionally, until bulbs are softened but have not taken on any color, 6–8 minutes. Add garlic and ½ tsp. mild red pepper flakes and cook, tossing occasionally, until garlic is softened, about 3 minutes. Add wine and increase heat to medium-high. Let cook, stirring occasionally, until wine is reduced by half, about 2 minutes. Add ramp greens, shrimp, and butter to pan. The Soft Scramble Sandwich May 20, 2021To get the most flavor out of this open-faced breakfast sandwich, look for spring onions with round bulbs and very tender dark green stalks. If you can find only thicker-stalked spring onions, cut the stalks in half lengthwise, then into 3″ pieces. Cook the stalks along with the bulbs; they’ll benefit from the extra time. Ingredients: 2 SERVINGS 8 spring onions 3 Tbsp. unsalted butter, divided Kosher salt, freshly ground pepper ¼ cup white wine vinegar 1 cup fresh ricotta 1 oz. finely grated Parmesan (about ¼ cup) ½ lemon 1 small garlic clove 2 5×5″ pieces focaccia 4 large eggs, beaten to blend Preparation: Step 1 Place a rack in center of oven; preheat to 350°. Trim woody ends of spring onions. Separate white bulbs from green parts with a knife. Cut bulbs in half through the root end; if size varies wildly, cut larger bulbs into quarters. Cut tender green parts of stalks into 3″ pieces; set aside separately from bulbs. Step 2 Heat 2 Tbsp. butter in a 10″ nonstick skillet over medium until foaming. Add onion bulbs and toss to coat in butter; season with salt and pepper. Cook, stirring often, until deeply golden brown and starting to soften, 4–5 minutes. Add vinegar, onion stalks, and ½ cup water and continue to cook, stirring occasionally, until almost all liquid is cooked off and bulbs are very soft and jammy, 6–8 minutes longer. Transfer to a plate. Wipe out skillet. Step 3 While onions cook, mix ricotta and Parmesan in a small bowl; season with salt and pepper. Finely grate lemon zest and garlic into ricotta mixture and stir to combine. Step 4 Warm focaccia in oven (place directly on rack) until soft and warmed through but not browned, 2–3 minutes. Divide between plates. Spread ricotta mixture in swooshing dollops on top of focaccia. Step 5 Melt remaining 1 Tbsp. butter in skillet over medium-low heat. Add eggs; season with salt. Crispy Braised Chicken Thighs With Artichokes May 18, 2021Crispy Braised Chicken Thighs with Artichokes, Leeks and Tarragon cooked over baby potatoes. A simple spring dinner to highlight the season’s bounty. This braised chicken recipe sings of Spring with fresh artichoke hearts, tarragon and leeks. The star of this dish is easily fresh artichokes- and it’s best to save this recipe until they are in season and in abundance. Not only will they be less expensive, they will be at their peak of flavor. Pieces of chicken thighs are simply seasoned with kosher salt and pepper and seared in a skillet. In the same pan, fresh artichoke hearts are sauteed with leeks and baby potatoes, then de-glazed with vermouth (or white wine) and chicken stock. Fresh tarragon leaves and lemon zest are added along with a tiny little bit of cream. The chicken thighs are nestled down in this lovely spring goodness, and it all goes in the oven for a bit. When it comes out, the chicken is juicy and crispy, and the artichokes flavorful and tender. A delicious one-pot meal. We’ve had a unusually warm Spring here and our city is exploding with blossoms. Mothers day came and went, and the dogwood we planted (for my mother) burst out in white, shouting, I’m still here. The Lilies of the Valley returned quietly, laden with tiny white bells, unbelievably fragrant. I’ve been thinking about flowers lately. How quickly they bloom… and then go – their sole purpose being opening, becoming fully what they are, no matter how temporary. Last evening, while walking through the lilac grove, smelling each one, I thought to myself (a little morbidly) that I probably only have forty more springs to experience all this loveliness, if I’m lucky. And suddenly all the blossoms and all the flower smells in the night air…seemed so much more important. This morning, as I study at the sleepy blossoms outside my window, I wonder, will I ever fully open? Some things just can’t be forced. We are, what we are when we are. But today at least, I feel somewhat willing. Through the years, I’ve been a witness to this in others- the gradual opening of those close to me. Watching them become more and more of who they are. It is a beautiful thing to behold. It moves me. Prepare a bowl of cold water with lemon juice. This will keep the artichoke hearts from browning. Working quickly, one artichoke at a time, snap off the tough outer petals. I like to save mine for the next day, in a zip lock bag. These can be blanched, marinated and then grilled for a tasty side or appetizer. Here is a marinade for grilled artichokes that I use repeatedly with good success. Once the tough green petals are snapped off, you will see silky yellow petals which must come off too. Just pull them off with your fingers. Remember to work quickly to prevent browning. Finally, you will get to the fine thread-like filaments. These are inedible, even when cooked, so using a spoon, firmly and gently pry them off. If you get the edge of your spoon, in just the right spot, they will come off easily. Once these are off, using a sharp paring knife, quickly trim the artichoke edges and stem- removing the tough skin of the stem and the bottom 1/2 inch or so. Immediately immerse in a bowl of cold lemon water, to help prevent browning. You can cut a whole chicken into pieces, or use chicken thighs. Pat dry, sprinkle with kosher salt and pepper and sear in a hot skillet. I usually cook the bottom side longer than the tops, because the tops will brown in the oven, and you don’t want them overly brown. Once seared, set them aside. After draining off some of the chicken fat, in the same pan, you will saute the leeks, artichokes and potatoes with a little butter. For this dish, I use tiny baby potatoes, just cut in half. Whatever potatoes you use, make sure they are cut to about a 1/2 inch thick, so they cook to the proper done-ness. When ready to saute the artichokes, pull them out of the lemon water and slice them to 1/4 inch thick. Sometimes I’ll throw in some pearl onions. Mushrooms would taste good too. Or fresh English peas. Or caramelized fennel bulb. Make it your own. This recipe calls for a 1/4 cup of fresh tarragon, which to me, pairs really well with artichoke hearts. But, if you are not a fan of tarragon, fresh sage is a really good alternative. Once the artichokes, leeks and potatoes are just tender, after about 10 minutes, de-glaze with Vermouth (or white wine). Bring to a boil and reduce by half, about 5 minutes. Add stock, lemon zest and fresh tarragon and a little half and half. Once simmering, give a quick stir and taste for salt. You may need to add a pinch of salt and pepper. Snap off all the hard out leaves using your fingers ( Save for later) With a sharp paring knife, trim off all the outer green skin around the base and stem, keeping the stem in tact. Remove the yellowish soft leaves and using a spoon, gently scrape away the white or purple silk like threads. Immediately place in the lemon water, to prevent browning. Slice just before placing in the skillet. Preheat oven to 425F. Pat chicken dry and season with kosher salt and pepper. Heat 1 T butter and 1 T olive oil in a heavy bottom oven proof skillet over med high heat. Place chicken skin side down and sear for until golden, about 5 minutes. Turn and brown undersides until golden, about 7-8 minutes. Remove chicken and set aside. Drain some of the chicken fat, leaving about 1 tablespoon oil in the pan. Add 1 tablespoon more butter. Add leeks, sliced artichokes, sliced potatoes and fennel seeds. Saute on med heat for 8-10 minutes, stirring frequently, until they just begin to soften. Season with a generous pinch of kosher salt and pepper. Deglaze the pan with vermouth (or white wine). Reduce by half, about 4 minutes. Add stock, mustard and fennel seeds, half and half, half of the fresh tarragon and 1/2 of the zest. Give a stir, bring to a simmer, and taste broth adjusting salt and pepper. or Bibingka? Easy Filipino Rice Cake May 14, 2021Growing up I called this Filipino dessert “Biko”, but I’ve learned that it’s also called “Bibingka”, “Malagkit” or even “Bibingkang Malagkit” which is probably the best name for it. Bibingka is basically a cake made with sweet glutinous rice or sweet glutinous rice flour aka Mochiko flour. Malagkit literally means “sticky”. So Bibingkang Malagkit translates to Sticky Rice Cake which is exactly what this dessert is! What we called Biko is a sticky rice cake that is topped with a coating of thickened coconut milk; it is simply put another name for the same dessert. Anyway whatever you call it it’s delicious. It’s one of the dishes that fall under the “kakanin” category of Filipino food which are sweet treats usually made with rice, coconut, and root vegetables. Recently I got a yen for some Biko and buying some was not an option. I always find that when I buy any type of Filipino food at restaurants I always end up disappointed and make it the way I like it at home. I looked at several recipes for Biko or Binbingkang Malagkit and they all involved more steps and ingredients than what I recalled from childhood. I guess the recipe got fancier since I was a kid! So I thought back to how my Lola (grandmother) Juling told me to make it. Her way was way too easy and used 3 ingredients! So I decided why not, do it Lola’s way, her Biko was always delicious. Besides I wanted good old fashioned and simple. None of that fancy stuff for me! And not soaking rice overnight! So without a recipe and with just 3 ingredients I set out to make my Lola’s Biko and let me tell you it came out perfect! My grandkids and kids all loved it! In fact it’s so easy I could make it everyday; but I won’t, it’s way too fattening! I thought I’d share this simple recipe with you. You will love it! I use my rice cooker to cook the rice, but if you don’t have a rice cooker you can cook the sweet rice on the stove just how you’d cook regular rice. Biko Ingredients: 4 Cups uncooked Sweet Rice (you can find this in Asian Markets, there are many brands to choose from) Water to cook the rice 2 Cans Coconut Milk (you can find this in Asian Markets) 2 Cups Brown Sugar Directions: Place sweet rice in Rice Cooker or in a pot. Add enough water to reach a bit under the water line in the rice cooker (if you’re cooking in a pot on the stove use a little bit less water than what you’d normally use to cook rice). You want the rice to be just a bit undercooked. Wait for the rice to cook. Again you don’t want the rice mushy, you want it a bit undercooked. Meanwhile oil a 9×13 baking pan well, bottom and all sides. Set aside. Place brown sugar and coconut milk in a pot and bring to a boil, stir constantly so the coconut milk and sugar combine well and is smooth. Set aside. When rice is done put it in the baking pan and smooth out evenly. Pour the coconut mixture over all. Bake in a pre-heated 350º oven for about 1 hour or until all the liquid thickens. The top will bubble as it bakes. Remove from oven and cool. Cut into squares and serve. Cover leftovers and leave on the counter, it has a shelf life of about 2 days. If storing longer than 2 days place it in an airtight container and refrigerate but it can get a bit hard. To soften place a damp paper towel over a piece and microwave for about 30 – 45 seconds. You can also freeze it in airtight freezer bags and thaw at room temperature before serving. Spring French Potato Salad May 13, 2021A simple French Potato Salad with fresh herbs – tarragon, parsley and chives, with a flavorful Dijon Vinaigrette. Healthy, vegan and light with no mayo! Savory, quick, and easy, this French Potato Salad is simple to make, yet deeply satisfying. It pairs well with so many things and is perfect for gatherings and potlucks. Savory Leek and Kale Galette May 11, 2021True happiness has nothing to do with making everything perfect, or denying the imperfections of things. It’s often the imperfections that make something or someone so loveable, so beautiful, so memorable, and even so forgivable. ~Jeff Foster There is so much flavor bursting from this Savory Galette. A flaky tender crust made with a bit of earthy rye flour, perfectly complimented with creamy leek and kale filling with just the right amount of tang. The crust is made with “rough puff” pastry dough, a galette dough you’ll want to keep in your back pocket for down the road, and your own creative fillings. What I love about this galette dough, is that it comes together much faster than traditional puff pastry, yet it is still flaky and tender. You can make it a couple of days ahead for less prep time and even keep some in the freezer for spontaneous inspiration. Alternatively, it is also totally fine to use pre-made puff pastry dough! While it may look as though there are a lot of steps here, it all comes together fairly easily, especially if you make the rough puff dough a day or two ahead. It is so worth the effort! And once you get the hang of it, it is fun to make. This is a much requested special occasion dish in our house. what is rough puff pastry? It is a faster variation of a classic puff pastry dough- (think croissants). Traditional puff pastry consists of laminating one big block of butter between the dough, which is a process that takes several hours of rolling, refrigerating and patience. Ruff Puff gets its flaky layers by using large chunks of butter in the dough. Instead of rolling out by hand, we let the food processor do some of the work of incorporating the butter into the dough. Though it is not quite as delicate as traditional puff, it still yields a flaky dough in significantly less time. Thirty minutes of hands-on time will have you on your way to a lovely tender pastry crust. why should i make galette dough? It is not as difficult as you may think and it will elevate the overall dish. It makes a perfectly flaky crust for tarts, galettes, and other delicacies. You can make it a few days ahead of time, making prep time easier. It also freezes well! Store for up to a month in the freezer. how to make the galette dough: It starts with chilled flour and very cold butter. In a food processor pulse just a little- you want the chunks of butter to be visible, more of a pinto bean size rather than the usual pea-size. Empty flour into a cold bowl. Keep all ingredients chilled! This makes for a more flaky crust. Add cold water and vinegar. Vinegar helps tenderize the dough by inhibiting gluten development and keeps the dough from oxidizing and turning gray. Bring together as best you can with just a couple of stirs. VERY important not to over mix. The dough is very shaggy! You will probably have some dry flour bits, but don’t worry! With a little patience and trust, it will come together. Pat it into a 4×4 block as best you can. Refrigerate, sealed in plastic, for half an hour. In this time the flour will begin to hydrate. Lightly flour as needed for the rolling pin and on top of the dough. Roll out into a 5×11 rectangle- approximately. Let it be cracky and rough. Fold the galette dough over on itself in thirds. Also called a letter fold. Square up the sides and ends with a bench scraper by just lightly tapping in. Turn the dough so the short side is towards you and repeat the rolling process 2 more times. This is what gives you the luscious flaky layers of dough. how to roll out galette dough: roll the dough out to a 5 x 11 rectangle letter fold the dough turn short side toward you and repeat this 2 more times. On the third turn fold the dough in half. At this point refrigerate for 45 minutes or up to 3 days. Or freeze up to one month! Once the galette dough is chilling you can start on the filling. It comes together pretty fast! Chop up the leeks, garlic and kale. Saute them with olive oil. Set aside when tender. Pull the galette dough out of the fridge. Let it rest 20 minutes before rolling. Roll the galette dough out on a piece of parchment to 1/8 of an inch thick and in an approximant 14-inch circle. Spread a little mascarpone cheese on the rolled out dough all but the outer 2 inches. TIP: Cutting the edges of the dough with a sharp knife will make them puff up more. Lay filling and grated gruyere cheese on top of the mascarpone. Brush the outside 2 inches with egg wash. Fold the dough over the filling, pinching together every 2 inches, try not to push the dough into the filling. No need to be too fussy it’ll puff up when it bakes losing a lot of the definition. Pour the beaten egg mixture over the filling. Brush top with egg wash. TIP: For a better bottom crust, bake on a pre-heated pizza stone or pre-heated cast iron pan. Carefully transferring- lifting the parchment and tart on to the stone. Sliding onto a pizza peel or cutting board can help with the transfer. When it comes out it will be puffed up and gloriously fragrant and golden. Serve the savory galette like quiche for brunch or lunch with a hearty leafy green salad. Also makes a lovely appetizer. Instructions Rough Puff Pastry Dough (allow 2 1/2 hours, can be made ahead) Pulse flours, sugar, and salt in food processor to mix. Add chilled butter pieces. Pulse 3-4 times until butter is still the size of pinto beans. Dump mixture out into a bowl. Place the bowl in the fridge for about 15 minutes to get it cold. Remove from fridge. Add vinegar and the ice water. Gently, carefully mix the dough just until it seems well distributed. It will be very craggy and may have dry flour bits. Dump the dough onto a piece of parchment or plastic wrap. Form dough together, as best as you can, into about a 4 x 4-inch square. Wrap up and place in the fridge for 45 minutes. Roll out into a rectangle approximately 5 x 11. Fold the pastry in thirds widthwise, like a business letter, resulting in 3 layers of dough. Turn the short end toward you and repeat step 6 two more times. After the third turn fold the dough in half. Refrigerate for one hour or up to 3 days. Rest the dough for 20 minutes at room temperature before rolling out. Leek and Kale Filling and Galette Assembly Set oven to 425 degrees. If using a pizza stone or cast iron pan, place in the oven now while preheating. Saute’ kale, garlic and leeks in olive oil with the 1/4 teaspoon of salt over medium heat for about 8 minutes. Turn off heat and cover with a lid for 5-10 more minutes until tender. Add sage and parsley. Set aside. Meanwhile in another bowl combine eggs, anchovy paste, dijon, lemon juice, salt, and black pepper. Roll out dough on a piece of parchment to 1/8 of an inch thick and in an approximate 14″ circle. Trim the edges of the dough with a sharp knife to allow them to puff up. Spread mascarpone cheese on the rolled out circle, all but the outer 2 inches. Lay filling and grated gruyere cheese on top of the mascarpone. Whisk together egg wash. Brush the outside 2 inches of dough with the wash. Fold the outer 2 inches of dough in over the filling, overlapping dough every 2-3 inches gently pinching just enough to secure. Pour the seasoned beaten egg mixture evenly over the filling. Brush top of the crust with egg wash. Carefully transfer, lifting the parchment and galette onto the stone, cast iron or baking sheet. Sliding onto a pizza peel or cutting board can help with the transfer. Bake 10 minutes then turn oven down to 375 and bake another 25-35 minutes until puffed and the crust is golden. Cool 20 minutes before cutting. Notes Freeze rough puff pastry dough up to one month, thawing completely before using. Letting it sit in the fridge over night works great. For a better bottom crust, bake on a pre-heated pizza stone or pre-heated cast iron pan. To garnish with leek rounds; brush thin slices of leeks with oil and sear for about 4-5 minutes on a hot pan. Gently remove with a metal spatula and arrange on top of baked galette. chicken bake with amaranth and herbs May 7, 2021Bursting with flavours, this is anything but your average roast chook. SERVES: 4 PREP TIME: 15MINS COOK TIME: 1HR 20MINS INGREDIENTS: 14 DIFFICULTY: EASY INGREDIENTS: 200g amaranth (from health food shops) 15 unpeeled garlic cloves, bruised 2 baby fennel, cut into eighths 8 Asian (red) eschalots, halved 2 tbs currants 2 tbs finely chopped preserved lemon rind 1/4 cup (60ml) extra virgin olive oil 1.2kg whole chicken, butterflied (ask your butcher to do this) 2/3 cup (165ml) chicken stock 1/2 bunch each mint, parsley and basil leaves Lemon wedges, to serve ALMOND DUKKAH 1 tbs each cumin, coriander and fennel seeds, toasted 1/4 tsp dried chilli flakes 1 tbs chopped roasted almonds METHOD: 1.For the almond dukkah, using a mortar and pestle, pound seeds until coarsely ground. Stir through chilli flakes, almonds and 1/2 tsp salt flakes, and set aside. 2.Place amaranth and 2 cups (500ml) water in a saucepan over high heat and bring to the boil. Cover, reduce heat to low, and cook for 20 minutes or until amaranth has absorbed water and is tender. 3.Preheat oven to 220°C and grease a shallow roasting pan. 4.Cover base of prepared pan evenly with cooked amaranth. Combine garlic, fennel, eschalot, currants, lemon and 1 tbs oil in a bowl, then arrange over amaranth. Top with chicken, breast-side up. Spoon remaining 2 tbs oil over chicken and roast, on top shelf of oven, for 15 minutes or until chicken is slightly golden. How to: Butterfly chicken 5.Reduce oven to 200°C, carefully add stock and roast for 45-50 minutes or until juices of chicken run clear when the thickest part of a thigh is pierced with a skewer. Remove from oven, scatter with herbs and almond dukkah, and serve with lemon wedges. Beer Bouquet Tutorial – Beer Gift Idea for Men!June 4, 2021DIY Crafts / DIY Holiday Crafts / DIY Projects / Father's DayNot sure what to get your man for Valentine’s Day or an anniversary? How about a beer bouquet? It’s simple to make, and he’s sure to love it. Whine alert – men have it SO much easier than women when it comes to gift-buying! Amiright? Especially when it comes to an occasion for a smaller gift, like Valentine’s Day or anniversaries. All the guys have to do is stop by the florist (or Trader Joe’s!) for a bouquet of flowers and a card…but there is no “standard” romantic gift for men! (Unless I’ve been missing something all these years??) Our 8th wedding anniversary was this summer, and we don’t typically do big anniversary gifts for each other. I wanted to get my husband more than a card, but didn’t have any good small gift ideas either. So I decided to get him a 6 pack of craft beer…but dress it up a little bit 😉 A beer bouquet! It was pretty simple to put together – I used my Silhouette to cut out paper roses and leaves from red and green card stock. If you don’t have a cutting machine, though, you can find plenty of rolled paper flower templates on Pinterest to print and cut out by hand. I rolled the paper rose around the top of the beer bottle, using a few pieces of double-sided tape to attach it. Then I added some leaves to the side of the bottles and a green circle to the lid. Of course, I couldn’t put this beautiful beer bouquet back into a plain old 6 pack holder…so I used some wrapping paper to cover it up and make it look a little bit nicer 😉 Ta-da! A bouquet for men! My husband was surprised and impressed. And another positive, when he put the beer in the fridge he didn’t have to worry about guests grabbing his special “rose” beers by mistake. Set over medium heat and cook, tossing occasionally, until bulbs are softened but have not taken on any color, 6–8 minutes. How about a beer bouquet? It’s simple to make, and he’s sure to love it. Whine alert – men have it SO much easier than women when it comes to gift-buying! Amiright? Especially when it comes to an occasion for a smaller gift, like Valentine’s Day or anniversaries. All the guys have to do is stop by the florist (or Trader Joe’s!) for a bouquet of flowers and a card…but there is no “standard” romantic gift for men! (Unless I’ve been missing something all these years??) Our 8th wedding anniversary was this summer, and we don’t typically do big anniversary gifts for each other. I wanted to get my husband more than a card, but didn’t have any good small gift ideas either. So I decided to get him a 6 pack of craft beer…but dress it up a little bit 😉 A beer bouquet! It was pretty simple to put together – I used my Silhouette to cut out paper roses and leaves from red and green card stock. If you don’t have a cutting machine, though, you can find plenty of rolled paper flower templates on Pinterest to print and cut out by hand. I rolled the paper rose around the top of the beer bottle, using a few pieces of double-sided tape to attach it. Then I added some leaves to the side of the bottles and a green circle to the lid. Of course, I couldn’t put this beautiful beer bouquet back into a plain old 6 pack holder…so I used some wrapping paper to cover it up and make it look a little bit nicer 😉 Ta-da! A bouquet for men! My husband was surprised and impressed. And another positive, when he put the beer in the fridge he didn’t have to worry about guests grabbing his special “rose” beers by mistake. This cut has plenty of great flavor, thanks to some beautiful marbling, so you can forget about crazy marinades and rubs: All you need is salt, pepper, and a really hot grill. Ingredients SERVINGS 1 1½–2-inch bone-in rib eye (about 2 pounds) 2 teaspoon kosher salt, divided 1 teaspoon coarsely ground black pepper Coarse sea salt Preparation Step 1 Put steak on a wire rack set on a rimmed baking sheet.
