Neurological disorders are likely due to nutrient deficiencies as a result of malabsorption and inflammation in celiac disease. UNDERSTANDING GLUTEN LEVELS The most frequently cited research that is used to determine gluten thresholds for people with celiac disease is a study by Catassi et al. They determined that more than 50 mg of gluten per day was harmful for people with celiac disease, but that some also showed villous atrophyat only 10 mg (1).
WHERE TO FIND A DIETICIAN The only medically approved treatment for celiac disease and gluten intolerance is to follow a gluten free diet. Yet, when making a big change in your eating habits, it is equally important to make sure that you are consuming the foods that will provide all of the nutrients that your body needs.
