VANILLA RICE PUDDING FOR TWO 1. Combine the milk, rice, and salt in a medium saucepan (nonstick is great). Bring to a boil over medium-high heat, stirring frequently. The size of your asparagus can help you decide what technique you’ll use to cook them. Thick asparagus are great for stove-top braising: brown them first in a little butter, then add a little liquid, cover loosely, and cook until tender.COOK THE VINEYARD

The size of your asparagus can help you decide what technique you’ll use to cook them. Thick asparagus are great for stove-top braising: brown them first in a little butter, then add a little liquid, cover loosely, and cook until tender.COOK THE VINEYARD

VANILLA RICE PUDDING FOR TWO 1. Combine the milk, rice, and salt in a medium saucepan (nonstick is great). Bring to a boil over medium-high heat, stirring frequently. (Watch carefully so that the milk does not boil over; if it begins to, move the pot off the heat for a few seconds until you can reduce the heat.) Reduce the heat to low, cover and gently simmer, stirring ARUGULA, CARAMELIZED PEAR, AND TOASTED WALNUT SALAD 3. Lightly toast the walnuts in a dry skillet over medium heat until golden brown, 3 to 5 minutes. Remove from the heat and set aside. 4. In a large salad bowl, prepare the dressing by whisking together the oil, vinegar, garlic, salt and pepper to taste, mustard, and QUICK-ROASTED EGGPLANT SLICES 3. Preheat the oven to 325°F and place a rack in the center of the oven. Line the bottom of a 9-inch cake pan with a parchment paper circle (see page 23) and set it aside. 2. In a medium bowl, whisk together the yogurt, olive oil, superfine sugar, whole eggs, LEMON ROSEMARY PARMESAN SCONES 1 teaspoon finely grated lemon zest. 1 teaspoon finely chopped fresh rosemary. ¾ cup (6 3/8 ounces) cold buttermilk, plus more to brush on. 1. Position a rack in the center of the oven and heat the oven to 425°F. Line a cookie sheet with parchment or a nonstick liner. 2. CREAMY, LEMONY, BLENDER CAESAR DRESSING 1/2 cup extra-virgin olive oil. ¼ cup finely grated Parmigiano Regianno. 1. Put the anchovies, the garlic cloves, the egg yolk, the lemon zest, the lemon juice, the Dijon, the salt, and the pepper in the jar of a blender. Blend until the anchovies and garlic are thoroughly chopped. Scrape down the sides ifFRIED SMELTS

MEET THE NEW SQUASH IN TOWN: ROBIN'S KOGINUT Every year our Island farmers grow new vegetable varieties; some turn out to be a flash in the pan, a few really good ones become keepers.I’m betting a new squash variety called Robin’s Koginut will be a keeper. Both The Grey Barn and Farm and Morning Glory Farm planted the seed this year, which is available from Row 7 Seeds, a collaboration between Chef Dan Barber of BlueFRIED SMELTS
