Liking of fatty foods depends on inborn genetic traits related to fat perception, rather than simply the fat content of the food. PHILADELPHIA (May 17, 2021) – Researchers have known for some time that insulin plays a vital role in regeneration and growth in some types of neurons that relay environmental sensory information to our brains, such as sight. SCIENTISTS - MONELL CHEMICAL SENSES CENTER Research at Monell is truly interdisciplinary. Psychologists, chemists, neuroscientists, geneticists, and more each contribute a unique approach. Learn about our IMPROVE NUTRITIONAL HEALTH Genetic variation shapes an individual’s perception of fatty foods. Liking of fatty foods depends on inborn genetic traits related to fat perception, rather than simply the fat content of the food. Participants in a recent study sampled six types of high- and low-fat potato chips and reported on how fatty they tasted and how much theyliked them.
MONELL’S TMAU LEGACY An enzyme called flavin-containing monooxygenase enzyme 3 (FMO3) normally metabolizes – breaks down — dietary trimethylamine into a non-odorous byproduct.People with TMAU are born with a defective version of the gene that codes for FMO3 and the resulting faulty FMO3 enzyme is unable to completely break down trimethylamine.. When the U.S. Centers for Disease Control announced that the sudden loss of taste and smell was one of the six primary symptoms of COVID-19, Monell researchers moved quickly to launch research to better understand the chemosensory nuances of COVID-19. On other research fronts, the loss of smell (anosmia) is an increasingANOSMIA CAUSES
The second most common cause of anosmia is a prior upper respiratory infection (URI), such as a cold.Viral damage to the olfactory receptors and the surrounding cells appears to be the only underlying mechanism for URI-related smell loss.Unless given very early during the actual viral infection, anti-inflammatory therapies such as steroids will not reverse anosmia caused by a URI. PERCEIVING THE FLAVOR OF FAT: A MONELL CENTER TWINS STUDY Researchers Find Genetic Variation Shapes Individual Perception of Fatty Foods. PHILADELPHIA (July 13, 2020) – Most people would agree that the pleasure of some foods stems in part from its fat content. New research, led by the Monell Chemical Senses Center, has now found that liking of fatty food is more complex than its fat content alone – it could also be related to inborn genetic CAREERS - MONELL CHEMICAL SENSES CENTER Research Technician. A full-time research technician position is available to assist with studies on development of taste culture. Primary responsibilities include running experiments of immunocytochemistry, DNA sequencing, microscopy, calcium imaging, high throughput screening assay, molecular biology and cell biology experiments and cell culture.ANOSMIA RECIPES
