HERBIE'S SPICES
Herbie has long been the nickname of Ian Hemphill, one of Australia’s foremost culinary herb and spice experts. Herbie spent his childhood surrounded by herbs and spices, when his parents, John and Rosemary Hemphill, were pioneering the herb and spice scene in the1950s.

LENTIL & DHAL SPICE 30G Drain beans, reserving 1 cup liquid. Heat ghee, add spice blend, fry 1 minute, stirring. Then add in order: onion puree, tomatoes, yoghurt, beans and reserved liquid, stirring well after each addition. Add salt to taste and simmer for 20 minutes, stirring occasionally. Add a little water if it sticks to the bottom. WHAT IS DAGAR PHOOL? Our favourite way to use Dagar Phool is in this simple Marathi Mushrooms recipe: Heat ghee in pan, add garlic, stir 1 minute. Add garam masala, dagar phool, salt, mushrooms, beans, salt and water. Cover and cook over low heat approx 8 minutes until beans are cooked. Stir in yoghurt and reheat before serving. BAHARAT BEEF WITH OLIVES Heat a large frying pan and toss beef in remaining Baharat spice and brown for 2 minutes each side before adding to the casserole. Use stock to deglaze the frying pan then add to pot with crushed tomatoes, olives and salt. Add a little more water if necessary to achieve your desired consistency. Keep refrigerated and use within 1 week.
