Instructions. In a large pot, bring water to boil. Salt with 1-2 tsp. salt. Peel and chop the potatoes into 1/2 inch dice. Add to the boiling water, and keep to a simmer until the potatoes are tender, about 10-12 minutes. Drain the potatoes and add to a large bowl. The original recipe used a sweetened wine, which I wasn’t up for, nor did I have on hand! I did however have a bottle of gifted Pinot Noir from a few months back and wondered if anyone ever made Sangria with Pinot Noir- Usually the recipes that I see use super sweetened wines, like CREAMY CHICKEN ASPARAGUS SOUP Gah. I was made aware of this fact from the Fantastical Food Fight bloggers, who make some kickin’ recipes for all things national holiday- they have some great honey recipe ideas for September at the bottom of this post- so check them out!. If you are celebrating Rosh Hashannah (the Jewish New Year), you know that an integral EASY STOVE TOP RATATOUILLE I love this meatless dish that is all veggies. This Ratatouille is more like an italian stew, than a side dish. I serve it with meatballs, instead of pasta, but if you want to keep it vegetarian, this can stand alone with some grated cheese, and a nice glass of red. 5-INGREDIENT FROZEN PINEAPPLE DAIQUIRILeave a reply
Happy Daiquiri Day {I am making this part up}! You know it’s getting warmer out, when you start seeing frozen cocktails around here, so I am deeming it Daiquiri Day! This pineapple daiquiri (oops, I spelled it ‘daquiri’ when I posted my Strawberry Daquirirecipe
a while back) is the perfect drink to sip with a little umbrella sitting in it… as you bask in your lounge chair on a hot and humid day. So let’s get crackin’! And, you can enjoy these any old time, ‘cuz they are THAT easy! JUST 5 INGREDIENTS, NOT INCLUDING THE ICE. * 3 cups frozen pineapple chunks * 1 cup fresh pineapple chunks * 1/2 cup rum (light or dark) * 1/4 cup fresh lime juice (can mix with lemon juice if you like)* 2 TBSP. sugar
Now, if you don’t have any fresh pineapple, you can add more of the frozen but the fresh pineapple is what makes it TREMENDOUSLY creamy and delicious. I mean it. It did it both with and without the fresh pineapple and the fresh beats out. That said, I never usually have pineapple on hand, and frozen pineapple is easy to keep on hand…so this recipe is adaptable for easy-prep so you can make cocktails whenever you want them! But since I’ve made this recipe, I’ve been buying more pineapple, just incase (wink).
IT’S SO EASY:

been on my mind instead of my same old red wine, but… I tried the Sarah Jessica Parker Rose (Invivo X it’s called) a few weeks ago and YUM! Rose is coming back for summer with this one! READING & LISTENING TO I have been listening to audiobooks for my commute now that I am driving over an hour each way again, and I can get in some great “reading” this way. I am picky about my reader voice, and you might be too, but the 9th in the series by Louise Penny is really ramping up for me, and I am loving it. And also I recently read via audio, The Hating Game , by Sally Thorne. GAH! Chick-lit at it’s finest. So stinkin’ fun and I recommend to get you out of any reading rut! As far as actual reads, I just finished Robert Galbraith’s (AKA J.K. Rowling’s alternate pen name) 5th in the Cormoran Strike series – sososo long, but super good. BUYING, BUYING, AND BUYING Vitamins- I had a chat with some other moms and we’re in agreement: Probiotics all the way! I just buy what the store has on sale, the latest was Nature’s Bounty which always has buy-one-get-one deals. I also take Vit-D, which I just learned you have to take with fat- as in, with food that has some fat in it. My dermatologist told me this, as she needs to tell people to stay out of the sun, but also has to tell them how to take their vitamin-D…anyhoo. Vitamins. Facewash. The cheapest and best oil-wash from the drugstore is our go-to around here. Best, best, best. This lotion for my cracked heals is another dermatologist recommendation that has me recommending to everyone I see- it works SOwell!
Inexpensive clothes at Walmart. Yo! Walmart has improved. My girls are loving the $2.99 tank tops. And I can buy them as many as they like, and I don’t even mind that one of them crops them all! That is a deal. My $5.00 Secret Treasuresbra
wasn’t too shabby either! Don’t knock it until you really go and look. I don’t love shopping there as an “experience” as it’s super chaotic, but on a weeknight, it’s less crowded. Not exactly exciting, but besides the clothes, their Equate brand allergy medicine, is GREAT- the same as Claritin! I need this a lot right now and Claritin is expensive- this works just as well for me. I am always down for a good deal that has quality: I see you Walmart. I also had a chance to hit a huge antique store- my girls love these too. One found some costume jewelry finds, and I found a cute planter that I can’t wait to get set up with some plants…that I will probably kill, but the thought is there right?! IN SEARCH OF (ALL IDEAS WELCOMED!): A good facial moisturizer with SPF that doesn’t smell like sun lotion and also rubs in really nicely. Mine is sitting on my skin in a weird way, and I want to use it but can’t stand it! A mascara that won’t sit on my lower lid almost as soon as I put iton.
New sneakers (for running, maybe?)- for exercise. Also sneaks forcuteness.
A bathing suit or two. But don’t even get me started with this one.Gah.

CLASSIC POTATO SALAD (WITH VEGAN OPTION) With summer temperatures, I start thinking about grilling, easy to make salads, and eating outside. Potato salad is always a summer staple, but we eat it all year long as it also fits the comfort-food bill and is super easy and fast to make. This version includes an easy option to make this completely vegan too. This recipe is my favorite to make since it’s a classic and I usually have all the ingredients on-hand. CLASSIC POTATO SALAD (WITH VEGAN OPTION)Hardly A Goddess
An easy to make, classic potato salad that you'll want over and overthis summer!

Ingredients
* 4 large yellow or russet potatoes* 2 stalks celery
* 2 scallions
* 1/2 cup bottled Italian dressing * 1/2 cup mayonnaise Use vegan mayo if making this vegan * 1 Tbsp. yellow mustard* 1 tsp. dried dill
* 1/2 tsp. salt
* 1/4 tsp. ground black pepper * 1/4 tsp. celery saltInstructions

In a large pot, bring water to boil. Salt with 1-2 tsp. salt.*
Peel and chop the potatoes into 1/2 inch dice. Add to the boiling water, and keep to a simmer until the potatoes are tender, about 10-12 minutes. Drain the potatoes and add to a large bowl.*
Dice the celery and scallions, and add to the drained potatoes.*
Pour the 1/2 cup of Italian dressing over the potatoes mixture and gently mix until covered. Put in the refrigerator to chill.*
Make the dressing by mixing the mayo, mustard, dill, salt, pepper, and celery salt in a bowl.*
When the potatoes have chilled, add the dressing, thoroughly mixing until totally covered. Chill until serving. Optional garnishing: parsley, paprika, or scallion.Notes
My favorite and most recent version of this includes the no-eggno-dairy mayonnaise

See? Isn’t that easy? I love this side-dish with burgers, or grilled chicken, and also it keeps for 3-4 days in the refrigerator really well. If you are going to a cookout, you could double this and there would be plenty to bring for a larger group!PIN FOR LATER:
