MENU PLANNER.
CANNED SALMON RECIPES Canned salmon is an overlooked ingredient, in my opinion. It’s a fantastic source of protein, omega-3 fatty acids, and calcium. In addition, canned salmon is typically fresh caught vs. farmed, and inexpensive compared to its fresh counterpart. SIMPLE, FRESH TOMATO SAUCE In a large saute pan, heat olive oil over medium-low heat until warm. Add tomatoes. Stir and cook for several minutes until tomatoes soften. Add garlic, white wine, and 1 tsp salt. Stir for an additional minute. Add basil and stir until it just begins to wilt and release flavor. Taste and season with additional salt, if desired. SUPER EASY CHICKEN AND SAUSAGE GUMBO Saute and stir for 5-6 minutes or until vegetables are tender. If needed, add a little bit of stock to the pan to prevent ingredients from sticking. Add stock and tomatoes. Bring to a boil. Reduce heat to a simmer. Return sausage to pan and add okra. Simmer for 10 minutes, or until okra is tender. EASY THAI YELLOW CURRY CHICKEN Saute and stir the curry paste for 1-2 minutes, or until it becomes fragrant. Add coconut milk and brown sugar, and stir until combined. Once the mixture begins to bubble, add chicken and onion. Saute, stirring frequently for about five minutes, or until the chicken is opaque. Add potato, set to a low simmer, and cover. JUICY AND CRISPY DRY BRINE CHICKEN Preheat oven to 400. Place the chicken on a rack in a roasting or baking pan. Roast for approximately 1 hour, or until internal temperature of the chicken reaches 165 degrees in its meatiest part. Let rest for 15 minutes before carving and serving. PRETZEL CRUSTED CHICKEN Taste and season with a little bit of salt. Place HALF of the mustard mixture into a shallow dish and add the uncooked chicken. Turn to coat. Dredge the marinated chicken in the pretzel crumbs until coated on both sides. Place chicken on a rack over a baking sheet. Bake for 20-25 minutes, or until internal temp reaches 165. EASY ROAST BEEF SLIDERS Pre-heat oven to broil. Slice rolls in half (if not pre-sliced) and spread horseradish sauce on the top half of the rolls. Set aside. When her favorite Italian Wedding Soup was discontinued a few years ago, I was inspired to create my own version, which has become a staple in our house (and the most popular recipe on this blog to date).. Recently she’s adopted a new favorite: fried rice.The first time she tried it a local restaurant, she was immediately hooked. JUICY AND CRISPY DRY BRINE CHICKEN Preheat oven to 400. Place the chicken on a rack in a roasting or baking pan. Roast for approximately 1 hour, or until internal temperature of the chicken reaches 165 degrees in its meatiest part. Let rest for 15 minutes before carving and serving. SUPER EASY CHICKEN AND SAUSAGE GUMBO Saute and stir for 5-6 minutes or until vegetables are tender. If needed, add a little bit of stock to the pan to prevent ingredients from sticking. Add stock and tomatoes. Bring to a boil. Reduce heat to a simmer. Return sausage to pan and add okra. Simmer for 10 minutes, or until okra is tender. EASY THAI YELLOW CURRY CHICKEN Saute and stir the curry paste for 1-2 minutes, or until it becomes fragrant. Add coconut milk and brown sugar, and stir until combined. Once the mixture begins to bubble, add chicken and onion. Saute, stirring frequently for about five minutes, or until the chicken is opaque. Add potato, set to a low simmer, and cover. ROSEMARY AND GARLIC WHITE BEANS These creamy braised white beans, seasoned with rosemary and garlic, make a delicious and easy side dish. This recipe is based on our favorite white beans from Zoe's Kitchen. SIMPLE, FRESH TOMATO SAUCE In a large saute pan, heat olive oil over medium-low heat until warm. Add tomatoes. Stir and cook for several minutes until tomatoes soften. Add garlic, white wine, and 1 tsp salt. Stir for an additional minute. Add basil and stir until it just begins to wilt and release flavor. Taste and season with additional salt, if desired.THE PERFECT BLT
Chop In a small bowl, stir the chopped herbs into the mayonnaise. Set the oven to broil and place the slices of bread on a cookie sheet. Place the bread under the broiler and heat until it starts to get lightly brown on top. Only toast one side. Let the bread cool slightly, and then build the sandwich. EASY FRIED RICE WITH EGG My 8-year-old daughter knows good food. Place HALF of the mustard mixture into a shallow dish and add the uncooked chicken. Turn to coat. Dredge the marinated chicken in the pretzel crumbs until coated on both sides. Place chicken on a rack over a baking sheet. Bake for 20-25 minutes, or until internal temp reaches 165. PUREED RED LENTIL SOUP Instructions. Heat olive oil in a large soup pot. Add onion and stir, cooking until translucent. Add garlic and saute for one additional minute. Add all other ingredients to the pot. Bring to a boil and then reduce to a low boil/simmer. Simmer for 30-40 minutes, or until lentils and potatoes are soft. SOFT CRANBERRY SUGAR COOKIES Instructions. Preheat oven to 350. Combine Craisins and 1 cup of water in a saucepan and bring to a boil. Reduce to a simmer and cook until all of the liquid has been absorbed. Remove and let cool. Combine flour and baking soda in a bowl. In a separate bowl, combine sugar, Crisco, eggs and vanilla, and mix until smooth. THE EASY TRICK TO DIY CHALKBOARD ART AND LETTERING Supplies Needed: Any chalkboard surface. pencil. chalk marker. regular chalk. Saral white transfer paper. I used the same technique to draw a magnolia flower onto my other chalkboard. (Just google floral printable drawings and you’ll discover many options). The possibilities really are endless. THE BEST AUTHENTIC PASTA E FAGIOLI Add the pureed mixture back into the pot, along with the drained beans, the chicken and beef broth, salt, and crushed tomatoes. Bring to a boil. Once boiling, add the pasta and cook until al dente, stirring occasionally to prevent sticking. Once the pasta is cooked, remove from heat. Taste, and add more salt if necessary. SPICY ASIAN CHICKEN STIR FRY In a large skillet or wok, warm 2 tbsp canola oil over med-high heat. Add the chicken and a splash or two of the sauce. Stir-fry until chicken is cooked through (no longer pink). Remove the chicken to a plate. Add 1 more tbsp of oil to the pan and pour in the snap peas, garlic, ginger, and scallions. SWEET POTATO MUFFINS The sweet potato muffins were really good. I did alter it slightly : I added 1/2 cup of oat milk, replace oil with 1/2 cup of coconut oil, used wheat flour, and used 1/2 cup of brown sugar.__
