CHOCOLATE CHIP MAPLE WALNUT COOKIES 1/4 t salt. 3/4 c dark chocolate chips. 3/4 c chopped walnuts. Preheat oven to 350. In a large bowl, combine the butter, brown sugar, extract and maple syrup together. Add in the egg and combine until fluffy. Dump in the flour, baking soda and salt and stir until just blended before adding the chocolate chips and walnuts and stirring again. NAPA MUSTARD SLAW WITH APPLE & WALNUTS 1/4 c olive oil. 1-2 T grainy mustard. 1 T marmalade. 2 T cider vinegar. 1 t honey. salt & pepper. In a large bowl, add in the cabbage and apples and toss well. Whisk together the vinaigrette ingredients, taste & adjust, if necessary and pour over salad. Scatter walnuts overtop and serve.

1 T tahini. juice of half a lemon. 1 t minced fresh ginger. 1 t agave syrup. 1/4 c olive oil. salt & pepper, to taste. Mix together all the vegetables into a large bowl. In a mixing cup or small bowl combine all the dressing ingredients. Pour dressing over salad (not all of it!) and let sit for a few minutes or just dig in! SIMPLE POTATO SALAD WITH LEMON & CUMIN kosher salt & pepper. Scrub and rinse potatoes, cutting any large ones in half or quarters. Boil in salted water until tender, about 20 minutes. Drain. Meanwhile, in a small saucepan, heat olive oil until hot. Add in cumin seeds and red onion over medium-high heat until fragrant, about 5 minutes. LADY WHO LUNCHES: THE BEST CUCUMBER & CHEESE SANDWICH Layer slices of cheese over 1 slice of toast. Layer slices of cucumber over top. Sprinkle with sunflower seeds. In a mixing cup or small bowl combine all the dressing ingredients. Pour dressing over salad (not all of it!) and let sit for a few minutes or just dig in! A TART TINGLER: SOUR CHERRY SMOOTHIE 1/2 c plain, unsweetened yogurt. 1/3 c unsweetened sour cherry juice. 2-3 T agave syrup. Add the frozen peaches and sour cherries to your blender. Top with the yogurt, sour cherry juice and 1/2 of the agave syrup. Blend on high until smooth. Taste & add more agave syrup if needed. Pour into 2 large glasses. Print This Recipe. CRANBERRY LEMON SQUARES Filling: 2 1/2 c frozen cranberries. 1/2 c + 2 T white sugar. juice from 1 large lemon. 2 T corn starch. Preheat oven to 375F. Combine the flour, sugar, salt, baking powder, and lemon zest. Add the butter and use your hands or a food processor to crumble the dough into small pieces. Move crumbles to a mixer and add in the egg and vanilla. ALOO GOBI: POTATO & CAULIFLOWER CURRY WITH COCONUT MILK 1 can of chickpeas, drained & rinsed. 1/2 c frozen peas. sriracha (optional) In a large, heavy pot, heat oil and add in ginger and onion, saute for 3 minutes. Add in potatoes, cauliflower, and curry paste and let cook for 5 minutes, stirring occasionally. Pour in coconut milk and brown sugar along with enough water to just cover thevegetables.
KNIFE SKILLS: WINTER RUTABAGA SLAW Toss the mixture well with lots of fresh dill. In a small jar, combine the lemon juice, vinegar, mustard, olive oil, and maple syrup. Add in a pinch of kosher salt and a good grind of black pepper. Taste and adjust seasonings. Pour over slaw and toss well. Sprinkle slaw with toasted walnuts and serve. PICNIC SEASON: ONIGIRI AKA RICE BALLS Stir in vinegar, salt and sugar. Take a small bowl and line it with a piece of plastic wrap with lots of overhang. Add a spoonful of rice into the bowl and make a small indent with your finger or the spoon. Tip, use wet hands to keep the mess at a minimum – sticky rice is really, really sticky. Thursday December 22, 2016 CHRISTMAS BISCUITS: CARDAMOM SLICE & BAKE COOKIES Oh hi! 2016, hey? What a year! I bring cookies to celebrate the end of a true garbage year.
Cookies are not going to make everything better, but it’s butter and sugar and cardamom and lemon zest and those are all good things at the moment. I’ll take cheerfulness and kindness in cookie form and they’re easy enough to bake and share with friends and family. I made these last week for a visiting friend from Seattle who loves most things cardamom-related and they turned out really well. They’re very Christmassy and a perfect biscuit to eat with a cup of tea and a good friend. Buttery, spiced and not too sweet. I posted these cookies on instagram and a few people requested the recipe so here I am. It’s a little funny being back. I had to remind myself how to format the recipe and reacquaint myself with writing down words once more. It’s harder than I remembered and I’m feeling a little rusty dusty! I don’t really know where to begin, so let’s make a list because I’m pretty good with those… Here are some random things that made my life better this year: * The Longest Mixtape.

One Mississippi , Fleabag * Not being crippled by anxiety. I don’t know what happened – maybe it was to stop making assumptions or not googling every ache or maybe it was yoga and taking long walks. Whatever it was, I’m feeling normal again! * Consumer purchases, like a new waterproof winter coat,

* Seeing lots of great art, theatre & music – from seeing the Black Mountain College exhibition at the Hammer Gallery in LA, the Louis Stettner exhibit at Centre Pompidou, Veda Hille’s Onegin musical production in Vancouver, and seeing Cate Le Bon perform live on a quiet summer night in Vancouver. Well, that wasn’t so hard. A post and some cookies to boot. Have a wonderful Christmas and let’s all work together to make the world a much nicer and better place. Onwards, 2017! > CARDAMOM SLICE & BAKE COOKIES > _I prefer these cookies on the lighter side, so take them out at 20 > minutes and see if they need more time in the oven._>
> 2.5 c all-purpose flour > 2 t ground cardamom > 1/4 t freshly ground nutmeg > 1/4 t kosher salt > 1 c butter, room temperature > 1 c icing/confectioners sugar> 1 large egg
> 1 T vanilla
> 1 t lemon zest, finely grated > 1/2 c toasted almonds, finely chopped>
> In a medium bowl, whisk together the flour, cardamom, nutmeg and > salt. Set aside. In another larger bowl, beat the butter and > confectioners sugar together. Add in the egg, vanilla and lemon zest > and blend until well mixed. Pour in the flour mixture and blend > until just mixed. Divide the dough in two equal clumps on 2 sheets > of parchment or plastic wrap and using the parchment, roll out each > dough ball into a log shape. Wrap tightly and refrigerate 2 hours or> overnight.

> Preheat oven to 325F. Unwrap your dough logs and let them rest for a > few minutes to warm up on the counter. Scatter the finely chopped > toasted almonds onto each sheet of parchment and roll the logs with > firm pressure so that the logs are completely covered in nuts. Cut > into 1/4 inch slices and place on a parchment covered or silpat > covered cookie sheet, about 1 inch apart. Bake until lightly golden > on the bottom and just starting to colour around the edges, about > 20-25 minutes. Cool cookies on wire racks and then store in an > airtight container.
