MELTING HEART BUNDT CAKE – A VALENTINE RAINBOW CAKE RECIPE My Rainbow Bundt Cakes have been a fun cake to make for any holiday. They are easy to make because all you basically need is some Cake mix, frosting, food coloring and a tube pan or Bundt pan. The best part about making this dessert is that it’s so fun and easy and it taste great too. Each one becomes a work of art because you never know how it’s going to turn out until you slice it. All the colors twist and swirl as it bakes and it creates a fun dessert thateveryone loves.
For this Valentine version, I used Red, Pink, Black and White but you can certainly vary the colors and do it any way you like. If you would like to see a video of me making this cake for Halloween. Just gohere:

* 1 box Betty Crocker® SuperMoist® white cake mix * Water, vegetable oil and eggs called for on cake mix box * 1 box Betty Crocker® SuperMoist® Dark Chocolate cake mix * Water, vegetable oil and eggs called for on cake mix box * Black food coloring (I use the Black McCormick) * Red food coloring (I use the Red McCormick) * 1 (12 oz) can Betty Crocker® Whipped Fluffy White Frosting * Colored Sprinkles (optional)DIRECTIONS:
Heat oven to 325°F. Generously grease a 12-cup tube (Bundt) cake pan. Make cake batters as directed on boxes. Divide the white cake into twoseparate bowls.
Add some red food coloring to one bowl and mix to the desired shade of pink. Then, add red to the other and mix to the desired color red. Pour 2/3 of the chocolate cake batter into a bowl and mix with a few drops of the black food coloring. Discard the remainder of the batter or use it for cupcakes. (You only need 2/3 of the chocolate cake batter, because if you use the whole thing in won’t fit in the tubepan).
Pour 1/2 of the chocolate cake mix into the bottom of the greased pan. Carefully pour the pink over the chocolate, making sure you don’t stir it. Just pour it on top. Then, carefully pour the red batter over the pink batter and pour in the remainder of the chocolate. Bake as directed on box or until toothpick inserted in center comes out clean. Cool 5 minutes. Turn pan upside down onto cooling rack that is placed over a cookie sheet. Cool cake completely, about 30 minutes. Once cake is cool, equally divide your frosting into 3 bowls. Use the food coloring again to make one bowl red, one bowl pink and leave onewhite.
Microwave each bowl of frosting for a few seconds on high until it is smooth enough to drizzle over the cake. With a spoon, drizzle the pink frosting back and forth around the whole ring in a striping pattern until you use it all. Then do the same with the red and then thewhite.
Sprinkle with colored sprinkles if using. Set cake aside to dry. Store loosely covered and unrefrigerated. Cake can be made a day or two in advance.Betty Crocker

PROSCIUTTO WRAPPED GRILLED BRIE WITH FIG Everyone likes brie at a party. It’s so creamy and delicious with crackers and honey and grapes. It also plays nice with salty meats if you’ve got a full platter of appetizers to accompany it. But what about a combination in one easy dish where you have salty, sweet, creamy, crunchy, chewy and gooey, all in one. Prosciutto Wrapped Grilled Brie with Fig fits the entire bill. It’s an easy, delicious appetizer that will wow at every party, every holiday and it’s such a quick, easy recipe idea. But everyone will be blown away. Here’s a video of how to make it. Ingredients and Instructions Below the VideoINGREDIENTS:
* One 12-13 ounce wheel of Brie, cut in half horizontally * 10-13 slices prosciutto (about 8 ounces) * 2 tablespoons fig preserve (or preserve of your choice) * Bread, or crackers for servingHOW TO MAKE IT:
Preheat grill to about 350 degrees spray with non stick spray Cut the wheel of Brie in half and open like a sandwich. Spread the fig preserve on top of one of the pieces of Brie. Top with the other piece of Brie with the rind side up to create a sandwichlook.
Lay out the prosciutto slices in a round fan pattern. Place cheese wheel in the center of the prosciutto and begin to wrap the meat around the cheese until it is completely covered. Use an extra piece of prosciutto in any place that isn’t covered so that the cheese rind is no longer visible. Place prosciutto covered wheel on a plate, refrigerate until ready touse.
Heat your grill to about 350 degrees and spray the barbecue with non stick spray. Place the prosciutto wheel on the bbq and close lid. Grill for about 3 min. Carefully flip the wheel with a large spatula and grill on other side for about 3 more minutes or until ham looks brown and crisp on both sides. Move to a warm part of the grill that does not have direct heat and let sit for about 4-5 min. Remove from heat and serve on cutting board with cracker, bread andfruit.

HOW TO MAKE LEMON RICOTTA POUND CAKE FROM SCRATCH (DELICIOUS HOMEMADE) Lemon pound is a classic dessert recipe that is a no brainer for any party, picnic, dinner or other gathering. I wanted to make a twist on the basic lemon pound cake by adding ricotta cheese and making it even more delicious. And for a really special version of lemon ricotta pound cake, I wanted to make it homemade and completely from scratch. Serve it with fresh strawberries or blueberries, homemade whipped cream and some house made glaze or any topping of your choice and you’ll be the dessert hero. Watch me make it in the video below. NOTE: After recording the video and making another batch of the cake, I decided that the baking time is closer to an hour and a half, even though I said an hour to an hour and a quarter in the video. It’s a super moist cake so I recommend erring on the side of baking it closer to an hour and a half. Leave a comment to let me know howyours turned out.
INGREDIENTS:
* 1 ½ cups (3 sticks) – salted butter, softened * 3 cups – white granulated sugar * 6 large – eggs (room temp.) * 3 cups – sifted Cake Flour like Swans Down * ½ teaspoon – almond extract (optional) * 1 tablespoon vanilla extract * 1 cup – Heavy whipping cream * 3/4 cup full fat ricotta cheese * zest of one or two whole lemons * juice of one lemon * 1 tsp. of lemon extract in place of almond extract (optional for super lemony flavor) * 10-cup tube ban coated with 1 tablespoon melted butter and sprinkled with sugar GLAZE Ingredients (optional) * 2 cups – powdered sugar * 2 – 3 Table spoons– heavy cream * 1/2 teaspoon vanilla extract * 1 tablespoon lemon juiceSERVE WITH
Fresh berries and homemade whipped cream HOW TO MAKE THIS CAKE: PREHEAT your oven to 325°F. Butter and sugar a 10-cup tube pan. Sift the cake flour once; then measure and set aside. In a small bowl, juice one lemon and zest two – set aside In a two cup measuring cup or a small bowl, add one cup of heavy cream, mix in the ricotta, vanilla, and almond extract and set aside. In a large mixing bowl, cream the butter then gradually add sugar beating on medium speed until creamy. Add eggs, one at a time, beating just until blended after each addition. Then gradually add the cake flour and the whipped cream ricotta mixture, alternately beating on low speed. Don’t over beat. Stir in lemon juice and lemon zest. Pour into prepared pan. BAKE approx. 1 hour and 30 minutes or until a long wooden stick inserted in center of cake comes out completely clean. Cool in pan on wire rack 15 minutes. Remove from pan, and cool completely onwire rack.
GLAZE (optional):
COMBINE powdered sugar in medium size bowl. Stir in 2-3 Tbsp. of heavy cream. Add vanilla extract and lemon juice. Beat until smooth and creamy, adding more cream 1 Tbsp. at a time if necessary. Drizzle over cooled cake. Serve with fresh berries and homemade whipped cream. Smile.Recipes -

RECIPE VIDEO: HOW TO MAKE THE BEST, EASIEST, MOST DELICIOUS OVEN ROASTED AIR CHILLED CHICKEN DINNER Everybody loves chicken. It’s the kind of dish that brings back memories of being a child. It’s comfort food. It’s easy to make. It’s healthy. This oven-roasted air chilled chicken recipe is juicy and delicious and perfect for an everyday dinner or as one of the entrees for a small dinner party. Follow this simple recipe’s tips and tricks to make the best roasted chicken dinner you’ve ever tasted. It’s also a great recipe for sticking to a gluten-free, ketogenic or paleo diet. Serves about 4 people. Be sure to watch the video.Ingredients:
* 1 (3- to 3-1/2 pound) whole Air Chilled Organic Chicken* Cooking spray
* 1/2 stick of butter (half melted/half cold)* 2 tsp Kosher salt
* Freshly ground black pepper * Sprinkle of the following approximately 1/3 to 1/2 teaspoon ofeach.
* Garlic powder
* Onion powder
* Paprika
* Sugar
* 4 sprigs fresh thyme * 4 sprigs fresh rosemary * 4 sprigs fresh sage* 1/2 lemon, sliced
* 1/2 orange, sliced * 1 quarter of a small onion* Bakers twine
* Oven -safe thermometerHOW TO MAKE THIS:
Unwrap the chicken and remove the giblets from the cavity of the chicken and rinse in the sink with cold water. Place the chicken in a shallow roasting pan sprayed with cooking spray and pat the bird dry inside and out with paper towels. Melt half of the butter (1/4 stick) and spread it all over the chicken, front and back. Season the entire bird generously inside and out with salt, pepper, garlic powder, onion powder, paprika and sugar. Stuff the cavity of the bird with the cold butter, a wedge of onion, and a slice or two of lemon and orange and the fresh herbs, making sure not to over stuff. Place the leftover herbs and citrus around the outside of the bird. Tuck the wings behind the back of the bird, and tie the legs togetherwith kitchen twine.
Place an oven-safe thermometer inside the thickest part of the thigh of the bird but avoiding the bone. Cover the chicken lightly with plastic wrap and place it back in the refrigerator for about 30 -60 minutes to marinate. Remove the chicken from the refrigerator and let it sit at room temperature for 1 hour. Preheat the oven to 375℉ and place the chicken uncovered in theoven.
Roast for 1 to 1 and 1/2 hours or until the thermometer measures 160℉, rotating the pan ever 30 minutes to prevent burning. Also tent lightly with tin foil if the bird gets too brown during roasting. Once bird reaches 160℉, remove from oven and let it rest for 30 minutes before slicing. Place bird on serving platter or cutting board and slice to serve. Pan juices can be drizzled over the top of bird before slicing afterslicing.
