CHAMPAGNE AOC CREATION OF THE CHAMPAGNE CONTROLLED At the beginning of the 20th century, the phylloxera epidemic and the First World War destroyed the greatest part of the Champagne vineyard. The inhabitants of the Champagne region replanted the vines and unite to give a new beginning to their vineyard. CHAMPAGNE MATURATION ON LEES CHAMPAGNE MATURATION IN Maturation on lees is a continuous process. The greatest Champagne wines can spend several decades maturing in the Champagne cellars. All Champagne wines must spend at least 15 months in the bottle before release, of which 12 months maturation on lees is required for non-vintage cuvees. The minimum for vintage cuvees is three years. DOSAGE DOUX DEMI-SEC SEC EXTRA-DRY BRUT EXTRA-BRUT NATURE Dosage is is the addition of a small quantity of ‘liqueur de dosage’ to the wine, which will define the type of wine : extra brut, brut, extra dry, sec, demi-sec ou doux. The dosage is the final touch to the Champagne wine before final corking. CHAMPAGNE WINE AND THE 5 SENSES : HEARING, SIGHT, SMELL Champagne, like all wines, is an experience for all of the senses – colour, aroma, texture, flavour and in this case sound too. Learning to recognise and define the distinctions in Champagne – making associations, finding the right word – is what makes tasting Champagne especially fascinating. HISTORY OF CHAMPAGNE WINE, A RARE WINE, CHAMPAGNE WINE IN The vineyards were then entirely in the hands of the monasteries. So it was that in 496 AD this traditional use of wine, combined with the particular location of the Champagne vineyards, secured Champagne’s place in history. On Christmas day that year, the Frankish warrior Clovis was baptised in Reims Cathedral and crowned the first king of CHAMPAGNE WINE TRAILS CHAMPAGNE TOURISTIC ROUTES Coteaux Vitryats. This route through the hills in and around Vitry is a great new way for visitors to Champagne to discover the vineyards in the region of Vitry and the Lac du Der. The bocage champenois. CHAMPAGNE HOUSES, FEDERATION FOR CHAMPAGNE WINE TRADE Champagne wines owe their worldwide renown to the talent and expertise of the Champagne Houses. Very involved in the protection of the Champagne designation worldwide, they found strenght in unity, and created the Champagne Houses Union. CHAMPAGNE FRATERNITY ORDRE DES COTEAUX DE CHAMPAGNE The Ordre des Coteaux de Champagne is the official fraternity of the major Champagne brands. Its mission is to promote the variety, versatility, taste and other unique characteristics that make Champagne wines synonymous with success and celebration everywhere. The Ordre des Coteaux organizes Chapters, tastings and other activities, spreading PINOT NOIR MEUNIER CHARDONNAY CHAMPAGNE WINE GRAPE There are only 3 grape varieties allowed in Champagne wines : the pinot noir (38% of the vineyard), the meunier (32% of the vineyard) and the chardonnay (30% of the vineyard). Pinot noir and meunier are black grapes, and chardonnay is a white grape variety. CHAMPAGNE BOTTLING CHAMPAGNE SECONDARY FERMENTATION The winemaker kick-starts the effervescence by adding a sweet solution known as the ‘liqueur de tirage’ – still Champagne mixed with cane or beet sugar (20-24 grams/litre, for a rise in pressure by the end of fermentation of 5-6 atm, or 60 to 90 pounds per square inch) plus selected, acclimatized yeast cultures and additives that assist the ‘remuage’ process (riddling). CHAMPAGNE DESIGNATION CHAMPAGNE AOC HISTORY OF CHAMPAGNE The Champagne controlled designation of origin is governed by very strict rules : production area, planting, grape varieties, vituculture and grape harvest methods, pressing, wine-making, bottle labelling. These production rules are constantly optimized. CHAMPAGNE RIDDLING, MANUAL REMUAGE, AUTOMATED RIDDLING The riddling consists in gradually tilting the bottle from its horizontal position to a vertical one, neck-down, so as to bring the sediment in the neck of the bottle. The riddling is still manual in some cellars, but most of the time is it automated on gyropalettes. PLANTING CHAMPAGNE VINE GRUBBING-UP CHAMPAGNE VINES The grubbing-up and replanting of vines (or the planting of new plots) must be notified to the authorities. Planting must take place before the end of May (or late July for plants started in pots), following a period when the soil is rested and prepared. Champagne AOC wines may only be produced from the fruit of third-leaf vines (two yearsFrançais
