The recommended dispense temperature of the majority of brewers is between 11 – 13°C. Cask Marque audits to a required range of 10-14°C allowing a little leeway. If the beer is too warm unpleasant and unplanned aromas will be given off, too cold and the clean, fresh, vibrant tastes will be lost. The recommended dispense temperature of the majority of brewers is between 11 – 13°C. Cask Marque audits to a required range of 10-14°C allowing a little leeway. They are served cold (between 2 and 8 degrees centigrade) and they are more ‘gassy’ than cask beer. Some keg ales have a nitrogen mix added to the dispensing gas which gives the beer a creamy head (sometimes known as ‘creamflow’ or ‘smoothflow’) Certain keg beers are dispensed from a format known as ‘Key keg’. KEEPING AND SERVING CASK BEER Keeping and serving cask beer. When the beer arrives at the pub it needs to undergo its secondary fermentation before it can be served. The usual practice is for the casks to be placed in a cellar. Some pubs keep their beer in a special cool room on the ground floor and a few keep their beer behind the bar – preferably with some modest CASK SHOULD BE COOLER Cask should be cooler. Cask ale drinkers were surveyed by Cask Marque to gain their input as to cask ale’s ideal temperature. This followed last year’s Cask Report which identified temperature as the important driver of cask ale sales.
