Soul food has a rich and important history that ties Black culture to its African roots, and that history is deeply reflected in the staple recipes and techniques. Commonly known as "black rice", it's one of our most unique and delicious dishes. When the djon djon comes out, you know it's a celebration. Djon djon translates to "mushroom", specifically those mushrooms grown in the northern part of Haiti. As a result, the mushrooms aren't easily available for most folks so I like to suggest cooking the CRYSTAL'S MAPLE BOURBON WINGS • BLACK FOODIE Directions. 1. Pat the wings dry, and coat with garlic powder. Let it sit for 15-20 min. 2. While the chicken marinates, melt the butter in a saucepan over medium low heat, then add the onions to saute for 1 minute. Add tomato paste, and cook for another minute, letting the paste get a little caramelized.ARROZ DE ATUM
A traditional Cape Verdean diet is rich in fish and seafood so arroz de atum (also referred to as arroz ku atum) is a perfect taste of my island nation in one bite. When the djon djon comes out, you know it's a celebration. Djon djon translates to "mushroom", specifically those mushrooms grown in the northern part of Haiti. It's extremely versatile and used on everything from chicken wings to fried rice. This is my take on the classic recipe. I love it poured over chicken tenders and fries. Try it tonight - you won't regret it. JOLLOF WARS: A WEST AFRICAN SAGA • BLACK FOODIE Jollof- the beloved rice dish cooked in a delicious sauce takes on various forms, flavours and shades across many countries in West Africa. From Senegal to Ghana to Nigeria to Sierra Leone and several other countries- jollof rice has been and still remains a highly contested food. And a battle this legendary deserves attention. CREAMY RAW VEGAN CHEESECAKE • BLACK FOODIE Directions. 1. Soak cashews overnight or do a quick soak for 30 minutes using boiling water. At the same time, quick soak your pitted dates for 10-15 minutes, if needed to soften for the crust. 2. Pulse the walnuts/almonds into a fine meal (be careful not to pulse for too long and create a butter). AFRO-VEGANISM: REVOLUTIONIZING THE PLATE • BLACK FOODIE Once pride is established, tradition is born. In the U.S during the 1960’s, as a response to the racially oppressive society that Blacks were living in, the Black Power movement was born. Although it resembles its cousin, the chickpea, the Bambara bean has a distinct nutty and earthy taste. This vegan fried “chicken” is so good, I don’t know if I’ll ever go back to regular fried chicken. No joke. The key to the juiciness of these tenders are the oyster mushrooms – make sure that you’re using that specific type to get the familiar crunch and bite that usually comes with fried chicken. You can mix up the spices of the batter however you want, but don’t forget the pickle juice! It adds the tang and moisture that make this recipe soirresistible.
