FATTED CALF » COOKING TIPS Whole Roast Duck. Preheat oven to 375 degrees. Lightly score the skin on the breasts in a diamond pattern, using the tip of a very sharp knife. Salt and pepper the inside and outside of the bird liberally, then place breast side up on a rack fitted into a roasting pan. FATTED CALF » CLASSES & EVENTS Classes. Place the roast in a deep roasting pan fitted with a rack and place in the oven. Cook for roughly 40 minutes or until the exterior is nicely browned. Turn the oven temperature down to 275°F and cook for an additional hour or until a meat thermometer inserted into the center of the roast registers 115°F. FATTED CALF » PORCHETTA Place the porchetta in a roasting pan fitted with a rack. Lightly brush the skin of the porchetta with olive oil and sprinkle the roast liberally with coarse sea salt. Place into a pre-heated 375 degree oven. After about 40 minutes, when the roast begins to brown, turn the oven down to 325 degrees and cook for approximately two to three

hours.
