DEEPS KITCHEN
Transfer into bowl. If desired, add required amount of water to dilute the chutney. Now in a seasoning pan, add oil, once it is hot add mustard seeds. Once it crackled, add chana dal, hing and curry leaves and fry in low flame till curry leaves are crisp. Take care not DEEPS KITCHEN: CHETTINAD CHICKEN CURRY In a frying pan, add 3 tbsp oil, once it is hot add cinnamon stick, cloves, star maze, bay leaves and cardamom. Once you got nice aroma, reduce flame to low, add fennel seeds and black stone flower. Allow it to splutter.Take care not to burn any ingredients. DEEPS KITCHEN: ALOO GOBI MASALA Aloo gobi masala is my favourite dish which I always prepare whenever I feel like to eat some thing spicy. It is a great dish to take withRice or Roti.
DEEPS KITCHEN: TOMATO CHUTNEY Tomato chutney is a famous south Indian accompaniment for Idli, Dosa, paniyaram, utthapam rava dosa, adai etc. It is a kind of spicy and tangy sauce in which tomato, onion are sauted in oil and seasoned with mustard and other Indian dry spices DEEPS KITCHEN: TIFFIN SAMBAR In a small pan, add oil and ghee. Once hot, add hing,,mustard seeds, red chilli, garlic. Once garlic turn golden, add fenugreek seeds. Take care not to burn fenugreek. You will get bitter taste. DEEPS KITCHEN: BITTER GOURD CURRY Afetr 8 minutes of sauting add in the coconut and curry masala powder,mix them well and let it to cool down. Put it in blender and make fine paste out of it. Bitter gourd curry. In a kadai, add 3 tbsp. Once it is hot, add mustard seeds and allow it to crackle. Add curry leaves and bitter gourd and mix it well so that the oil should coatwell.

For blanching. Bring sauce pan full of water into rolling boil, add 1 tsp salt. Wait till it dissolve completely and then add cut cauliflowers. Switch off the flame and allow it to sit in hot water for 1 minute. Strain completely from water and it is ready to use . Apply oil to each concave surfaces of idly plate. Then pour right amount of batter to each idly surface. Stack the idly plates one by DEEPS KITCHEN: CHANNA MASALA Method : Take 15 cooked channa and mash them finely.(gives thickness and nice aroma of channa dal in your masala) Add oil into pan.Once it is hot, add cumin seed and pepper corns.Once it splutter,add cinnamon,cloves,star maze,cardamom and finally bay leaf.
