WHEY - THE LIQUID GOLD IN KEFIR - CULTURED FOOD LIFE Don’t throw out your kefir if it separates into whey and curds. Your whey, although less appealing to many individuals, is a superfood which contains a lot of healing properties. There is something known as “The Whey Cure” which was used throughout history. In fact, Hippocrates and Galen, two founding fathers of medicine, frequently recommended whey to their patients to heal them. This HOW TO USE YOUR SOURDOUGH STARTER A sourdough starter must be fed and cared for, just like a pet! You're going to hear me repeat again and again how important it is to feed your starter a 1-1-1 ratio of flour, water, and starter. If you have too much starter it gets too active and eats all the food and won't be as bubbly. If you have too much starter and don't want to throw it out, check out these recipes: Leftover Sourdough

Rooibos tea is well known for it's health benefits. It is said to promote healthy digestion, assist with weight loss and build stronger bones to name a few. Turn it into kombucha and you get even greater benefits, plus it is naturally caffeine free! DEHYDRATING AND ACTIVATING YOUR SOURDOUGH STARTER Dehydrating your sourdough starter is a great way to have a backup. It can last for at least 6 months and you can share it with others too. Sourdough starters that have been aged, used, and cared for are treasures and can be passed down to the next generation. I remember the day I decided it was time for me to make my own bread and control what went into it. My sourdough starter has been one 43 WAYS TO USE KEFIR CHEESE One cup of kefir whey made with non-fat milk has roughly 37 calories: 1 gram of fat, 2 grams of protein, and 5 carbohydrates. This can change based on the length of fermentation and the type of milk you use. Kefir is considered 99 % lactose-free since the milk sugars are FERMENTING TIP: PUT A LID ON IT? You can use jars with metal lids but I prefer the plastic lids. If the ferment touches the lid, a plastic lid won't leave a metallic taste. Also, it is better for you not to have metal touch the food during the fermentation process. You can also use clamp down jars or crocks but whatever you choose make sure you put a secure lid on it to seal

Sourdough is bread made from naturally occurring yeast and lactic acid bacteria that are naturally present in flour, rather than using baker’s yeast, to leaven the dough. In traditional sourdough recipes, you’ll find three ingredients: sourdough starter, salt, and flour. Sourdough is one THE HEALING CRISIS AND CULTURED FOODS A “healing crisis” is something that happens when the body starts a detoxification process which is really a program of natural healing. This is a common occurrence among some individuals who start consuming cultured foods. When you start consuming cultured H. PYLORI AND FERMENTED FOODS Many gastrointestinal diseases are caused by Helicobacter pylori (H. pylori) infection.H. pylori can cause gastric inflammation which may lead to gastritis, ulcers, and even gastric cancer.. H. pylori is a type of gram-negative bacteria that infects the lining of your stomach. This bacteria can stick to stomach cells and your stomach can’t protect itself very well. My sourdough starter has been one WHAT TO DO WITH YOUR CULTURES WHILE YOU'RE ON VACATION So for instance, if you have 1/2 cup of grains, then add 1/2 cup of sugar and increase the water to 8 cups and so forth. Place the grains in the sugar water, place a tight lid on the container, and place it in the refrigerator. This will keep for at least 2 weeks in your fridge. Longer than two weeks: If you’re going to be gone for longer SOURDOUGH CINNAMON SWIRL BREAD Instructions. Using a stand mixer with a bread hook, combine water, sourdough starter, olive oil, honey, and salt. Slowly add in flour 1 cup at a time beating until well incorporated and the dough begins to pull away from the bowl and form a ball. Keep mixing for an additional 5 minutes. You can also mix by hand in a large bowl and knead for 7 OVERNIGHT SOURDOUGH BREAD Cover the bowl and let it rest for 30-60 minutes. In the meantime, preheat your oven to 450°F. Cut a piece of parchment paper to fit your pot, leaving excess so you can grab the bread and take it out of the pot. Place your parchment paper over the bowl and invert the HOW TO MAKE GINGER SODA A ginger bug is a mixture of sugar, ginger, and water that captures wild yeasts and beneficial bacteria. Let it ferment for a few days and you’ve made your own ginger bug! This can then be used to make a probiotic and fizzy soda like ginger ale! The benefits of ginger CAN SOURDOUGH CHANGE THE GLUTEN-FREE DIET? Ferment it for 7 hours or longer. Sourdough bread is transformed when it is fermented for 7 hours or longer. Then it is not only easily digested, but can often be handled by those who are gluten intolerant. Here is a recipe to make overnight sourdough bread. Milk Kefir FAQs. Kefir is my favorite cultured food. It has the most probiotic strains of any cultured food (over 50 strains) and is also super easy to make. It was the first cultured food I tried and it made me well in so many ways that I started on a journey to learn all I could about this magical food. Kefir is a living food and can change FERMENTING TIP: PUT A LID ON IT? You can use jars with metal lids but I prefer the plastic lids. If the ferment touches the lid, a plastic lid won't leave a metallic taste. Also, it is better for you not to have metal touch the food during the fermentation process. You can also use clamp down jars or crocks but whatever you choose make sure you put a secure lid on it to seal WHAT TO DO WITH YOUR CULTURES WHILE YOU'RE ON VACATION So for instance, if you have 1/2 cup of grains, then add 1/2 cup of sugar and increase the water to 8 cups and so forth. Place the grains in the sugar water, place a tight lid on the container, and place it in the refrigerator. This will keep for at least 2 weeks in your fridge. Longer than two weeks: If you’re going to be gone for longer 20 SMART WAYS TO USE YOUR KOMBUCHA SCOBYS! Here are some of the benefits of eating Kombucha SCOBYs: Contains no or low calories. Absorbs water, making it easier to pass stools. Aids in waste removal, including metabolic waste normally excreted in bile. Has lots of insoluble fiber which is severely lacking in most Western

diets.

HELP! MY SCOBY IS UGLY AND OTHER COMMON ISSUES In the winter, or in houses below 70, the SCOBY will not thicken up like it will in warmer temps or in different seasons. Your brew can also take up to 3-4 weeks to finish. If your house is very cool, or if you are fermenting in winter, you can do a couple of things to help. Try adding double or triple the starter tea. 7 REASONS TO MAKE GOAT MILK KEFIR Only 2% of goat milk is curd, compared to 10% in cow milk. 5. Goat milk is lower in lactose than cow milk. However, when you make either cow milk or goat milk into kefir, it becomes 99% lactose free. The microbes eat the milk sugars leaving you that tart taste in the milk.

DON'T RINSE YOUR KEFIR GRAINS! You really don't need to rinse them at all, but if you want to rinse them. Rinse them in fresh milk. You can also give them a prebiotic like Prebio Plus which feeds them and makes them stronger and will also make your kefir more creamy especially if it is separating a lot. MY KOMBUCHA'S NOT BUBBLY? It will be the size of the opening of your jar. It forms a seal, and this will let the yeasts in the kombucha seal in the naturally-occurring carbonation. Then the yeasts will begin to consume the sugar in the tea, and the by-product of this is a natural carbonation. Just as yeast makes bread rise, the good yeasts in kombucha make your tea bubbly. EASY KEFIR SOUR CREAM I don't recommend using kefir grains in heavy cream. You can use them occasionally, but after a couple of batches the jar will become yeasty and the grains will struggle. DEHYDRATING AND ACTIVATING YOUR SOURDOUGH STARTER Dehydrating your sourdough starter is a great way to have a backup. It can last for at least 6 months and you can share it with others too. Sourdough starters that have been aged, used, and cared for are treasures and can be passed down to the next generation. I remember the day I decided it was time for me to make my own bread and control what went into it. My sourdough starter has been one WHAT TO DO WITH YOUR CULTURES WHILE YOU'RE ON VACATION So for instance, if you have 1/2 cup of grains, then add 1/2 cup of sugar and increase the water to 8 cups and so forth. Place the grains in the sugar water, place a tight lid on the container, and place it in the refrigerator. This will keep for at least 2 weeks in your fridge. Longer than two weeks: If you’re going to be gone for longer MY KOMBUCHA'S NOT BUBBLY? It will be the size of the opening of your jar. It forms a seal, and this will let the yeasts in the kombucha seal in the naturally-occurring carbonation. Then the yeasts will begin to consume the sugar in the tea, and the by-product of this is a natural carbonation. Just as yeast makes bread rise, the good yeasts in kombucha make your tea bubbly. HELP! MY SCOBY IS UGLY AND OTHER COMMON ISSUES In the winter, or in houses below 70, the SCOBY will not thicken up like it will in warmer temps or in different seasons. Your brew can also take up to 3-4 weeks to finish. If your house is very cool, or if you are fermenting in winter, you can do a couple of things to help. Try adding double or triple the starter tea. 7 REASONS TO MAKE GOAT MILK KEFIR Only 2% of goat milk is curd, compared to 10% in cow milk. 5. Goat milk is lower in lactose than cow milk. However, when you make either cow milk or goat milk into kefir, it becomes 99% lactose free. The microbes eat the milk sugars leaving you that tart taste in the milk.

YOUR KIDNEYS MIGHT NEED SOME KEFIR A kidney stone is a solid piece of material that forms in the urinary tract when there are high levels of certain substances such as calcium, oxalate, and uric acid. DON'T RINSE YOUR KEFIR GRAINS! You really don't need to rinse them at all, but if you want to rinse them. Rinse them in fresh milk. You can also give them a prebiotic like Prebio Plus which feeds them and makes them stronger and will also make your kefir more creamy especially if it is separating a lot. CAN SOURDOUGH CHANGE THE GLUTEN-FREE DIET? Ferment it for 7 hours or longer. Sourdough bread is transformed when it is fermented for 7 hours or longer. Then it is not only easily digested, but can often be handled by those who are gluten intolerant. Here is a recipe to make overnight sourdough bread. It is the best one for beginners and the one I CAN I EAT PROBIOTIC FOODS WHILE TAKING ANTIBIOTICS This is why consuming probiotic foods containing good bacteria is so important, even while taking antibiotics. Yes, many of them will be killed by the antibiotics, but not all of them if you consume The Trilogy.
