Simple solution – microwave the honey for 5 seconds. Add it to the vodka, ice & lemon juice – shake, strain – and you’re ready to sip away. I use a one ounce measuring glass for single cocktails – all the easier for throwing in the microwave. One like this. Just make sure it has measurements in ounces as well as teaspoons/tablespoons. Carefully drain hot water and fill saucepan with ice cold water. I find hard-boiled quail eggs are best served warm. Peel & serve or refrigerate until ready to use. CHEDDAR CHEESE QUICK BREAD Preheat oven to 350° Grease/spray a loaf pan. In a large mixing bowl, whisk together flour, baking powder, sugar, garlic powder and salt. Stir in shredded cheese. Set aside. In a separate bowl, whisk together milk, egg & butter. Add liquid ingredients CHOCOLATE RICOTTA CHEESECAKE Then I lightly spray the sides with non-stick cooking spray. For filling: Stir together ricotta cheese & sugar in a mixing bowl. Add in eggs, stir until combined. Stir in cocoa powder, cinnamon & vanilla until combined. Add in melted & slightly cooled chocolate, mix until mixture is of even color. "5 BANANA" BANANA BREAD Grease/spray a loaf pan. In a mixing bowl, whisk together flour, baking soda, salt, cinnamon and nutmeg. In another bowl, mash bananas. A fork works wonderfully. In a large mixing bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just tillcombined.
CHEWY OATMEAL CHOCOLATE CHIP RAISIN COOKIES Preheat oven to 375°. In a stand mixer or large mixing bowl, cream brown sugar, butter & granulated sugar. Add eggs, milk & vanilla – beat until combined. Add flour, baking soda, cinnamon & salt – beat until soft dough forms. Slowly beat (or stir) in oats, chocolate chips & raisins until just combined. SMOKEY PULLED PORK WITHOUT THE SMOKER Mix spices together. Rub down roast with spice mixture, rub all sides and into holes. Use all of spice rub. Place pork roast into small roasting pan. Pour 1/2 cup apple cider vinegar into pan. Bake covered, basting a few times, at 250 for 6-8 hrs or until roast is tender and pulls apart easily with fork. MUSTARD MARINATED TENDER BEEF ROUND STEAK / BLADE STEAK Sear steaks. Pour in beef broth, ground mustard, minced onions and remainder of spices. Bring to a slow boil, stirring to combine. Reduce heat to low, simmer covered for 2 hours or until steaks are fork tender. Flip steaks a few times, stir broth, and spoon juices on top of steaks. Serve with plenty of pan juices on top. ALASKA SALMON POACHED IN SOY SAUCE, GARLIC & GINGER Remove any bones if necessary. Combine water, soy sauce, garlic, ginger & honey in a medium saucepan. You want the salmon to be just about fully immersed in the liquid - so choose an appropriate size pan. The salmon can be poached in batches if necessary. JAM FILLED SPONGECAKE CUPCAKES Give it a few sifts and you got yourself cake flour. Egg whites – beat until stiff peaks. There’s nothing to it. Start with a clean and dry bowl – glass or metal – no plastic. Make sure your beaters are clean and dry. Carefully separate the eggs – you want no trace of yolks in the whites.
