ABOUT THE CHAMPAGNE® Its origin was the result of random cross pollination of several mango trees in the Soconusco region of Chiapas. From flower to harvest, the Champagne® mango is truly the most pampered of all mangos. Mangos in general are a nutrient-rich food, providing over 20 different vitamins and minerals, including vitamins A and C. MANGO RIPENESS OR RIPENING GUIDE Let hard fruit sit at room temperature until it ripe/soft. To speed up the ripening process at home, store mangos in a sealed paper bag at room temperature, preferably with another ethylene-producing fruit such as a tomato or avocado. This will help the fruit mature quicker, naturally. Mangos may be refrigerated for a short while only afterMANGO VARIETIES

FROM TREE TO SUPERMARKET First, the freshly picked mangos are bathed in an organic solution to remove tree sap. They are then bathed in 115 – 115.5 degree (F) water for 70 to 90 minutes. Water used in this process comes from. natural wells and is purified to a standard exceeding USDA regulations. The mangos are then hydro-cooled to 70 degrees; airdried, and packed

As an avid mango fan, Dr. Campbell has dedicated over twenty years to the research of various cultivars. CHEF NOAH’S CHAMPAGNE® MANGO FLAN Combine cream, milk and salt in heavy medium saucepan. Scrape seeds from vanilla bean into cream mixture; add bean. Simmer mix over medium heat. Remove from heat and let steep for 30 minutes. Custard. Step 2. Meanwhile, combine 2 cups sugar and 1/3 cup water in another heavy medium saucepan. Stir over low heat until sugar dissolves. MANGO & ALMOND COUSCOUS SALAD Directions. Vinaigrette. Step 1. For the vinaigrette, in a small bowl, whisk vinegar, oil, salt, crushed red pepper and garlic until combined. Stir in cilantro and cover and refrigerate until ready to use. Salad. Step 2. In a medium saucepan, cook the couscous for 1 minute in oil over medium-low heat to lightly toast, stirringfrequently.
NOAH’S CHAMPAGNE® MANGO CHICKEN In a medium size pan, sauté the ginger and the garlic. Add the rest of the ingredients except the mango and chicken, and then simmer for 4 minutes. Finally, add the mango and let simmer for an additional 2 minutes. Serve immediately. Step 2. Serve by placing a grilled chicken breast on a plate, then spreading some mango chutney over the chicken. BLACKENED CHICKEN BREAST WITH CHAMPAGNE® MANGO BLACK BEAN Preheat oven to 375°. Dredge one side of chicken breasts in spices. In a hot skillet, with very little oil, cook till blackened on spiced side. Remove and place in baking dish. Pour wine over chicken and bake for eight minutes. In a stainless steel bowl, mix mango, beans, tomato, onion, cilantro, seasonings, olive oil and lemon juicetogether.
