The recipe makes 8 small muffins, so if you want to make more, you can double the recipe. These healthy apple muffins are also a delicious healthy snack if you eat only one. HEALTHY APPLE STREUSEL OATMEAL MUFFINS I think this is the first baking recipe I share in a while. Living without an oven is hard, people. For the most part I rely on things like no bake cookies and one pan meals and I’m not complaining. Somehow, everyday life’s easier when you don’t need to preheat an oven. You save money on your electric bill, you don’t burn your hands as often, because you’re impatient and you don’t have to clean an entire oven once a year. Yet, a while ago I got a vision for streusel muffins. Not a vision…more like I ate a streusel muffin at a coffee shop. This was back when I wasn’t a neurotic freak yet and didn’t look at people as if their life’s purpose is to spread germs. Sneezemuffin is an actual thing in my mind now. So back then, I ordered one muffin and then another muffin, to make sure I really like them. And then I decided I needed to make some healthier, smaller muffins at home that nobody had touched with unwashed hands. And I hoped that I will save some money too and that my home will stop smelling like cabbage.
Since I didn’t have an oven, that last one didn’t happen. HOW TO MAKE HEALTHY APPLE STREUSEL OATMEAL MUFFINS I had to go to my sister’s house to made the streusel muffins there. I found an old apple that my nephew had started eating, but then apparently got bored and abandoned it. Apple streusel muffins sound good to me. And they turned out delicious. A bit too dense and not really fluffy, but delicious nevertheless. I knew how to make a healthy crumble with oats (see here), so
I decided to use that wisdom and put it on top of these muffins. I used butter this time because for whatever reason my sister didn’t have coconut oil, but if you want to use coconut oil – it will work as well and your muffins will have a nice hint of coconut. Then I used a hand blender aka immersion blender aka stick robot to blend a mixture that had oats, eggs, apple, vanilla, butter, cinnamonand yogurt in it.
I poured that thing into silicone muffin cups and then made the streusel. It’s very easy – blend oats, some fat, something sweet and a pinch of salt. I chose butter and honey. I formed some crumbles to top the muffins and then baked them for 20-30 minutes at 180C or 350F. And then these were ready. I tried to eat one before they cooled off, burned my tongue and realized I never learn from past mistakes. Then I took like 50 pictures of them and here we are. My tongue is healed and the muffins long gone, but I still remember how sweet, crumbly and delicious they were. Okay, now the recipe.Yield: 8
HEALTHY APPLE STREUSEL OATMEAL MUFFINS RECIPEsomething sweet!
PREP TIME 10 minutes COOK TIME 30 minutes TOTAL TIME 40 minutesINGREDIENTS
MUFFINS
* 1 cup oats
* 2 tbsp butter
* 2 eggs
* 1 tsp vanilla
* 1 ½ apples
* 3 tbsp honey
* 1 tsp baking powder* 1 tsp cinnamon
* 3 tbsp yogurt
STREUSEL
* 1 Tbsp honey
* 1 ½ tbsp butter
* 2 tbsp oats
* pinch of salt
INSTRUCTIONS
* Preheat the oven to 180C/350F. * Blend all muffin ingredients using a blender or a hand blender. Put the mixture into muffin cups. * Make the streusel by blending the oats, butter, honey and some salt together. You should get a thick buttery dough that sticks together. * Form crumbles and put them on top of the muffins. * Bake the muffins for 20-30 minutes or until golden-brown. * Let them cool off before having a bite and store leftovers in thefridge.
