Great flour. Not for beginners. Makes great sourdough. If you’re using a recipe to handrail you through a loaf this flour will throw you off kilter. Reduce your water down by about 5-10% and work from the feel of the dough rather than the absolute quantities. On Farine Biologique T80 (French Organic Stoneground White Flour)
