SCHOOL: 504 INFORMATION, STAFF LETTERS, AND TIPS FOR Celiac Disease at School 504 Information Letter to the Teacher Letter to the School Nurse Letter to Cafeteria Staff Letter to Guidance Counselor Letter to the Principal Managing Celiac Disease While Away at College I was not gluten free during my years at Ohio HOMEMADE LIMEADE CONCENTRATE Homemade Limeade Concentrate. 1 cup fresh Lime Juice (I use 4 cups, to quadruple) 1 1/2 cup Granulated Sugar (I use 6 cups) 1 1/2 cup Water (I use 6 cups) Make a simple syrup, combining the sugar and water in a saucepan over low heat. Stir occasionally until the sugar has completely dissolved. Add lime juice and stir to incorporate. GLUTEN FREE AND EGG FREE PASTA DOUGH Directions. Combine sorghum flour, tapioca starch, xanthan gum and sea salt in a small bowl, whisk to combine, then sift the entire mixture into the bowl of a stand mixer (use the paddle attachment). Turn the mixer speed to 'stir' (or the lowest setting), and slowly add the 1/4 cup of warm water and 1 Tbs. of olive oil. Last week, I took the boys to see “How To Tame Your Dragon” (a really GREAT movie by the way)!I loved the underlying message of the movie and thought it very appropriate for Sam, who has been struggling this school year to accept the things that make him “different” among his peers. Tom’s Bugles, which I found at my local gas station a while back, are Gluten Free! The manager of the convenience store will order a case from her supplier for me because I cannot seem to find a place to buy them online, in fact when I called Tom’s, the lady did say that you cannot order them online. So, if you are lucky enough to live in HOMEMADE WORCESTERSHIRE SAUCE I should have titled this post “WOO-HOOcestershire Sauce” because according to everyone I had taste it for me, it’s that good. Set the top pan over the simmering water and keep the glaze warm until ready to use. Dip the doughnuts, one at a time, into the warm glaze, covering the top half of each doughnut with glaze. Place the doughnuts, glazed side up, on the wire rack and let the glaze set for 10 minutes. Repeat to glaze the doughnut holes. Serve immediately. The mac and cheese, pizza and Happy Meals have been relatively simple to recreate. Spaghetti O’s GLUTEN-FREE STUFFED MUSHROOMS Preheat oven to 350 degrees F (175 degrees C). Clean mushrooms with a damp paper towel and carefully break off the stems, discarding the tough bottom end of the stem. Dice remaining portion of mushroom stems. Line a baking sheet with parchment paper (or spray with cooking spray) and place cleaned mushroom caps on baking sheet, cavity sideup.

In fact, I pulled out my aging bottle of Lea & Perrins (which is gluten-free) for a side by side comparison, and my husband said the homemade Worcestershire sauce was much better all around, STRAWBERRY SHORTCAKE WITH STEVIA EXTRACT IN THE RAW 3 Tbs. HOMEMADE WORCESTERSHIRE SAUCE I should have titled this post “WOO-HOOcestershire Sauce” because according to everyone I had taste it for me, it’s that good. In fact, I pulled out my aging bottle of Lea & Perrins (which is gluten-free) for a side by side comparison, and my husband said the homemade Worcestershire sauce was much better all around,GLAZED DOUGHNUTS
Set the top pan over the simmering water and keep the glaze warm until ready to use. Dip the doughnuts, one at a time, into the warm glaze, covering the top half of each doughnut with glaze. Place the doughnuts, glazed side up, on the wire rack and let the glaze set for 10 minutes. Repeat to glaze the doughnut holes. Serve immediately. GLUTEN-FREE BAKING CLASSICS BY ANNALISE ROBERTS On Saturday, I thought I would surprise my guys by trying to make a “real” sub sandwich. I think I came pretty darned close, thanks to Annalise G. Roberts, author of Gluten-Free Baking Classics. The recipe is appropriately called “Submarine Sandwich Bread” and is on page 178. GLUTEN FREE AND EGG FREE PASTA DOUGH Directions. Combine sorghum flour, tapioca starch, xanthan gum and sea salt in a small bowl, whisk to combine, then sift the entire mixture into the bowl of a stand mixer (use the paddle attachment). Turn the mixer speed to 'stir' (or the lowest setting), and slowly add the 1/4 cup of warm water and 1 Tbs. of olive oil. (1/4 tsp. + 1/8 tsp.) Ground Allspice. 3/8 tsp. (1/4 tsp. + 1/8 tsp.) Ground Cloves. 1/2 stick Cinnamon. 1 tsp. Sea Salt. 2 1/2 cups Water. Combine everything in a medium sized saucepan and bring to a boil over medium heat. Reduce heat and simmer until mixture has reduced to desired consistency, about 40 minutes. Remove cinnamonstick
DILL DIP WITH RAW VEGGIES The past two days have been a bit of a roller coaster ride for me as I’ve been preparing to set Luke up with a safe environment at preschool. Tom’s Bugles, which I found at my local gas station a while back, are Gluten Free! The manager of the convenience store will order a case from her supplier for me because I cannot seem to find a place to buy them online, in fact when I called Tom’s, the lady did say that you cannot order them online.
